    Making strange ice creams was my favorite hobby at the start of the covid lockdowns back in 2020, although, I always tried to make them good weird. Some favorites include spicy chili dark chocolate, cafe patron, Cabernet Sauvignon with nutella fudge swirl, saffron and honey, cardamom vanilla, summer truffle and honey, hennesey vanilla (SHOCKINGLY good), and bourbon pecan, but by far my crowning acheivement was a caprese ice cream sundae: riccota ice cream, basil gelato, and tomato sorbet, with balsamic caramel drizzle. It was next level unreal. Maybe I'll pick that hobby back up after this video

      Most of them sound far from strange. I mean, maybe the caprese sundae, basil gelato and tomato sorbet (though some tomatoes can be shockingly sweet, so it's a mileage varies kind of thing). Find a way to combine the three and instead of napoleon ice cream, you can have margherita ice cream, lol.
      What I'm looking for, personally, is pickle ice cream. I am obsessed with all things pickle. I regularly order pickle candy from Lofty Pursuits, and pickle cotton candy (and other things) from Vat 19...
      Pickle ice cream would be just the thing for me, lol

    Cheese ice cream has loads of historical precedent. Its largely gone out of fashion more recently (though, its still popular in parts of the world) but in the overall history of ice cream its honestly not that weird

      dood, ill tell yuh, cheese flavor is DA BOMB, some cheese flavors have chunks on it, and I do believe its common in Philippines so... i think there's some flavors here dat r kinda exotic, but overall, its so good!

    I've been fortunate enough to go to a couple high-end French restaurant where Trou-Normand were served, basically it's a palate cleanser between dishes. On one occasion, I was given a savoury curry ice (it was during a heat wave) and I must say it changed forever how I view iced confections. Since then, Parmesan Icecream, Tomato Icecream, Curry/Curcuma icecream have been eaten with delight. Try it, it's something else

    Here in the Philippines we have cheese ice cream "Quezo Real", it is really good. It has chunks of cheese in it. Sweet-salty goodness.

    This made me think of when Brian David Gilbert did his own video on some weirder ice cream flavors that he likes to make, which were Pina Colada, peanut butter and lychee, and Old Bay. I would love to see Joshua try the Old Bay ice cream.

    One of my favourite Kitkat flavours I had in japan was wasabi, and I was really surprised. But I can see how it has trouble working in icecream. It should probably be paired with another flavor.

      It was paired with another flavor in this video, Josh straight up adds matcha to it. Maybe the two don't mesh too well for an ice cream? Josh did say he could make the wasabi one better so maybe just did smth wrong.

    Here in Merida, Venezuela there is a 1000 thousand flavors ice cream store where I believe you could buy meat and beer flavored Ice cream, among many others, and they were very good.

    I'm a musician in Venezuela, if you want to learn to play an musical instrument through internet, I could teach you. It would help me a lot and I would be able to buy and eat weird flavoerd ice creams 😂 Thanks

    Two fairly popular flavors in the Philippines that I never heard of before, avocado ice cream and purple yam (kind of like sweet potato) ice cream. The avocado grew on me. Refreshing and creamy without being cloyingly sweet.

    Here's the most weird ice cream I have ever had (only counting the ones I liked) :
    -beer
    -corn
    -Taro (it's a root)
    -cempasúchil (it's a flower)
    -sweet potato
    -peppermint sherbet (it was weird because it was all natural, with a bunch of the leaves and a pretty strong flavor)

    There's a great little mom and pop gelato place near where I live that I frequent quite often. Everything there is made in-house and their gelato flavors (as well as their cookies, teas, chocolates, and other confections) change on a regular basis. There was one time where they had a gorgonzola cheese and honey gelato. While I was a little mystified at first, I was also very intrigued. I had never seen or heard of anything like this before. I got a medium sized scoop of it without sampling it first. It was DELICIOUS! It had this great sweet and tangy thing going on. It was perfectly balanced and there were actual bits of gorgonzola cheese in the gelato that gave it such a great texture. There were also these great swirls of honey throughout that were lovely, too. In conclusion, cheese in ice cream/gelato is indeed an amazing thing, and I believe that it should be more of a commonplace thing.

      I love gorgonzola ice cream! Once, I made a savory gorgonzola ice cream that I put on top of bison steaks with worcestershire onions and mushrooms! It was awesome!
      I also made a slightly sweet one for an old job to put on our cheese board, that we topped with honey, hazelnuts, and black pepper. So fucking good!

    That packet of cheese powder probably has tons of emulsifiers and other stuff in it that help the finished product come together smoothly. That's probably why the mac and cheese ice cream ended up the way it did.

    Where I’m from (south of France) we have a company called Pole Sud that does ice cream with whatever flavour you want. My parents had a restaurant and my boyfriend used to work for Pole sud so I tried a lot of different ice cream, the best out of the « weird » flavors for me were porcini mushroom, foie gras, and probably goat cheese. Surprisingly good! The goat cheese one is amazing with a tomato tarte tatin, it’s like a dessert that you eat as a starter.
    You should totally look up the company they make a lot of unusual things (a lot of classics too) but it could always give you ideas!

      I can't imagine eating corn in my ice cream. Eating frozen corn sounds absolutely disgusting to me. But I think I would enjoy the cheese ice cream without frozen veg in it. I mean really if u think about it cheese,cream,and milk are all dairy products and go hand in hand.

    Im a big fan of herbs or spices in ice cream personally. Mandarin and thyme, lychee and elderflower, melon and basil, lemon myrtle, and of course the GOAT, orange and cardamom

    The two finalist ice creams looks awesome. I wonder if Mac and Cheese has sodium citrate in it? That may explain the velvety texture. I definitely use it in my cheesy sauces for that luxurious texture. Looked online but not sure if the Australian Kraft mac and cheese contains the same as the US version. In general, I wonder if sodium citrate added to the warm milk for any ice cream custard would make it luxe!?

    Kraft cheese powder has powdered milk in it. If you add a touch of powdered milk to your custard, it helps prevent ice crystals and makes the ice cream smoother.

    At one of the restaurants I've worked for in the past we did some 'weird' ice cream flavours as well, from roasted bell peppers to watercress/bacon. Almost all of them were used in hearty-dishes, usually starters or second/third course. No churning at all, just freeze is and then pacotize which worked like a charm at creating a smooth and soft ice cream over and over. But we did more strange stuff like making gel out of hay to serve with a cheese dish for example. I must say, I've learned a lot of strange things there and it really opened my mind towards things that might sound strange. But, I must say, the best ice cream flavour I've ever had was pandan, without a doubt. Just regular plain ice-cream custard (we made it a bit different with stabilizers and stuff so it wouldn't melt during pacotizing) and instead of steeping with vanilla use pandan leaves. Shit was aromatic and brilliant! Also, don't forget about the OG weird flavour ice cream: black sesame. That shit is pure brilliance as well!

      Honestly, the Kraft Mac and cheese doesn't sound half bad. In Singapore, we have cheese foam boba milk tea. I mean it's not great, but it's not bad either. It's basically just sickeningly creamy milk. Imagine diluted butter and add a few tablespoons of sugar.

    We were on a road trip when we stopped at an Asian buffet. They had a bin of chocolate ice cream in the dessert area, and they also had wasabi in the sushi area. We were tired and goofy, so we decided to put the wasabi in the chocolate ice cream. It was actually good! (Mind you, this wasabi was not the “saucy” kind, but was like a dry-ish paste).

    here in Pernambuco, it’s common to have Cheese Ice cream( made with Queijo do Reino) with a guava syrup. That combination it’s called Romeu and Juliet ( cheese and guava)

    the kraft mac and cheese doesn’t surprise me at how better it was then expected. iv been to some mexican desserts stores and they’ll sometime have queso ice cream. it’s quite literally one of the best ice cream flavors i’ve ever had

    The weirdest ice cream flavor I saw right on the store shelf? Olive oil ice cream. Being adventurous, of course I had to try it, and got hooked. And now I haven't seen it for months, probably discontinued. What a tease. Thanks a lot, Ralph's/Krogers.

    Cheese ice cream existed way before social media. The Filipino ice cream company Magnolia has been making cheese flavored ice cream since the mid-90s at the very least... along with other flavors like sweet corn with bits of corn in it, durian, and sweet corn and cheddar

    Honestly wasabi ice cream sounds so good, yes it would be weird if the ice cream were spicy but if you ignore that, wasabi is a little bit sweet, idk I think it would be amazing

    Well played Josh! A couple decades ago, I tried a Vanilla and Black Pepper icecream. I thought my friend was bonkers... But I must say, it was GREAT! and it made me rethink what deserts could be. I'm very curious to try the Wasabi ice cream, as I think that has some interesting potential... What surprised me was the Mac & Cheese recipe... And because of your comments regarding Cheesecake, I would certainly consider making it now.

    I've made Asparagus ice cream before and also an Irish Car Bomb ice cream. The Apsaragus was weird. But the Irish Car Bomb tasted amazing.

    Wagamama, a restaurant here in the UK, used to do a chocolate fudge cake with wasabi in it, which was really nice - had kind of a minty taste to it.

    So, one time in here, we had a gelateria celebrating the local flavors and all, so we got stuff like local berries, a particular blend of herbs we use for a vegetable soup..then lardo, literally salted pork fat, aged in marble tanks, and olive oil. Surprisingly olive oil was decent.

    Avocado ice cream, rose, green tea, red bean, taro, basil, lavender. Those are my non-conventional flavors and they're delicious.

    I believe the wasabi one has so much potential!! Kitkat has a wasabi flavor and i love it so theres definitely has to be some hidden gold in there

    Currently dealing with recovering from wisdom teeth surgery, would totally go to town on that Mac and cheese ice cream since it’s been my go-to comfort food since I was a kid plus my sore gums are burning like the pits of hell.

    In France there is a convention every 4 years only for professionnals on new food inventions/products/or with companies that want some visibility etc. There I had the opportunity to taste very original ice cream like salmon, cactus which is incredible, cheese of course, balsamic
    Such an experience
    Also I had the chance to dine in a fine restaurant called agapé where I had a strawberry and lemon dessert served with an olive oil ice cream quenelle on the side, gorgeous 😍

    For the Mac & Cheese ice cream, do yourself a favor and use Hoosier Hill Farms Big Daddy Mac Mix (they have both no color and nuclear orange!)
    And most importantly, they're delicious and real!

    it's probably all the emulsifying salts in the Kraft packets that make it velvety smooth, if you want to skip the packet maybe you could use one of those and grated cheddar or something.

    One local ice cream shop makes a bagel & cream cheese flavor and it's actually very good. They also have a corn flavor that I haven't tasted (yet).
