the udon guy is checking the ph, temp and then the viscosity of the water for the perfect noodle. truly a science. that video was a dedication to a craft like watching an old machinist. beautiful
I feel so overwhelmed watching the Ramen guy doing that all by himself. It's incredible. He's just churning out the food perfectly, fast, and in such a tiny space. 🙇♀🙇♂🙇♂🙏🙏. Impressed.
I love it when chefs and cooks taste their food. I’m no longer able to because when allergy, and I have not found anyone that will give me criticism when I asked to taste my food that I can not eat. That egg looks so good especially doing what’s in it….. the salmon roe looks incredibly delicious.
had to instantly scroll down to see if another english speaking person freaked out like i did lol. must be nice to live in a country where you can trust the eggs like that
I love that in all this videos they eat a lot, the portions are huge, but, you never see a fat (of course not a chance for an obese one) person. This is proof that it’s the quality of the ingredients what matters. This is all fresh and not processed food. If there were this kind of restaurants in America and most of the west instead of every McDonalds and any other fast food chain, people would get in shape quite fast and obesity would become a thing of the past. Sadly people “love” their crap food, sorry, fast food.
hello jnoodles, the soup made for japanese ramen bowls are almost the best tomato sauce for spaghetti 'it turns out'. heard a restaurant in nyc for spaghetti and the marinara sauce was a crock pot simmer for hours and with ox tail. the dashi focus in making the ramen soup is fun to watch. the bottle just out of the market makes it seem small. and, here is a restaurant that makes 50 bowls with the chef showing you in his pot - it took 4 or 5 different smallest seafood in the soup. wanted to ask him if he knows the feeling of ground meat and ginger / scallion in yellow skin wrap in soup - growing up and eating a surprise in yellow skin and know seafood or bones were done with the soup. it is a clear soup with egg noodles and the yellow skin surprise inside. there is a garden across a restaurant big wong on mott - one day to try for you. elle for lamen - lo mein

具沢山の豚汁、粕汁、だし巻き卵、お刺身盛り合わせ、白菜と塩昆布のお漬物、土鍋のご飯、出汁巻き定食、いくら、明太子、大根おろし、鶏そぼろ、美味しそうですね。
😊
The udon maker is the epitome of working his dream job. He seems to enjoy every process and does it so passionately too 😊

Food looks lovely, all fresh real food, no ultra processed stuff in sight!!
I want to go to Japan right now and eat that lovely breakfast!❤
The first cook is amazing using a tiny kitchen area to cook so many meals by himself.
Cooking noodles in pressure cooker😂 Looks like so much more work than simply boiling like in all other restaurants I've seen in these videos
He’s extra with everything 😂😂😂
First shop is called Yawaragi located in Shinsaibashi.
Thanks! Might hit it up in November!
Japan is #1 気合 country. So much fighting spirit, it's insane.
That’s a big breakfast. Looks delicious.
かじ村さん、準備中の動画が中川家で親近感w

1:25 what is this doing to the eggs?? They use a lot of rare gadgets
man this world needs monsters, ghosts, demons, kaiju and everything else.
Yummy
46:55 what is he doing here? What is that device for??
路地裏と言っても心斎橋ですからね、超一等地です。
Why can’t they just drop the eggs straight into the bowl?😳🏴
悪い卵まで加えないように、割って別の器に入れて確認してからという作業
Do places like this allow non japanese speaking guests?

Someone needs to sanitize that kitchen 1:40
boo
Why? Unlike America and the UK, Japanese restaurants have impeccable hygiene.
every meal the same is BORING. breakfast should be eggs, bacon, sausage, etc.
Actually, it’s your suggestion that is BORING.
