I was glad to see the baking soda trick here, really took my stir fry game to the next level when I started marinating my beef in baking soda. I like the shaved meat option! i usually just slice it into strips, but I might try some meat shaving next time!

Hello! Technically you can but I assume it would mix with the sauce and you will have something more akin to bolognese sauce (which might be delicious! Who knows?). You save it by really browning your beef and developing a crust so it could withstand the storm. I think making meatballs first out of the beef would help it remain some shape and not blend with the sauce. Fry the meatballs, take it out and do the rest like the video. Cheers!

Couple pieces of advice the beef needs to be seared at a higher temp to truly get maillard reaction and to facilitate that more smaller batchs in pan to allow steam to evaporate.
On a sort of side note... y'all ever try Chinese broccoli? I don't feel itd be as fitting to this iconic dish however its so great as a broccoli switch out for so many asian stir fries. I love it way more for thai pad see ew

Get a lean ground beef I tried it with veg. And turned out tasty! Not mushy on top of rice yum!
