How to fix a crooked cake

  • Sometimes things just don't go according to plan. The cake ended up super uneven and crooked (I used cake offcuts for the middle layer, and it was just too soft, plus the filling was very soft). Luckily there's a quick fix. Instead of covering the cake in cream cheese frosting, I used my go-to Swiss meringue buttercream (very stable and is firm when chilled). Make sure your (uneven) cake is well chilled, so the layers don't shift and move around even more. Use buttercream to level the top, and add more on the uneven sides, then use the cake scraper to help get the sides straight.
    The cake is a 12cm diameter chocolate cake, filled with peanut butter cream cheese frosting and covered with peanut butter Swiss meringue buttercream. It is decorated with chocolate ganache and homemade peanut brittle.
