I seal them with a semi gloss clear lacquer. Usually Deft or Watco brand. Sometimes I will cut the first coat by 25% with lacquer thinner if the detail is very fine.

Actually, one wing crosses over the top of the tail and the other is slightly hidden by being tucked under the tail. I can see how you thought that though.

It really depends on the size of the bird but something like this falcon would be around 5 weeks.

No it's Tupelo wood. If you aren't familiar with it it is a very light, somewhat soft wood. Carves great with power tools and very little grain.
