I have been canning potatoes for quite of few years. I’ve also canned half pork + half potatoes that I will add a green chile sauce or red chile sauce that my husband and family love. Well, today I made potato salad hoping I would get at least an 85% of a true fresh potato salad. I was so happy for the outcome that I would rate it at a 99%! My husband’s only comment was about the pale yellow color and once he found out they were the canned potatoes he was ok with that.👏🏼👏🏼👏🏼👏🏼 I will now be canning more potatoes just for this use as it will be great in my prepping shelves.
Good informational video. Rather than blanch them I process them an additional 10 minutes, so I can them completely raw. I do rinse them several times before packing the jars..
I too found that I do not like the canned potatoes as a mashed potato, the texture is definitely off... I will definitely try them in the frying pan like you suggest. Sounds delicious 😋 I do like to add mine to my soups and stews.
Yes you right Im not a fan of water packed potatoes either last year i processed them without liquid just salt and a little samd processing time , taste is so much more desirable .
