Cut the kingfish in 1x1x2 cubes. Wrap in dollar store bacon (seriously. Its paper thin) and grill till the bacon is done. The thin bacon will cook fast enough to not dry the fish out, and the fish will absorb some of the bacon fat. Brush with a tangy bbq sauce while cooking for added flavor.

I used to know that exact feeling as you brother. The tarpon seem like they’re all on top eating bait, but they are actually all on the deeper down, eating swimming blue crabs that drift with the current; they only come up to the top to gulp air. So, casting lures at them when they come up for air is not a good idea, because they are just going back to the bottom again to feed on crabs. You need to take a 5/0 or 6/0 circle hook with an egg and scoop up a blue crab with a dip net if you can and drift it along the jetties. It may seem wrong for tarpon but it works 100%.
Nice video as always. Do the spike shoes ever grab too much like catch on anything when you're walking? I'd be worried of them catching in small cracks or holes.
With spikes, you can run up and down the slippery algea covered concrete to get into casting range of schools of jacks. You will break a spike from a golf shoe before it will trip you.
living on the texas coast myself, it is true that the opinions on kingfish are evenly split regarding flavor... many cannot stand the taste, say it's too fishy, while others say u have to soak it in buttermilk overnite in fridge (there are a MILLION "old wives tale" type solutions like that for getting rid of harsh taste) and it will be fine. others say if u eat it immediately after catching, as coop did, it's the best fish you'll eat.

When camping or on a fishing outing, I don't season my fish while grilling or pan frying. There's plenty of flavor already. Hint: if you ever want to increase your fish flavor 5 fold, wrap it in banana leaf or aluminum foil and LEAVE THE HEAD ON. The flavor increase is unbelievable.
