Soooo I’m a baker and this is definitely a cool effect but why not just make chocolate cream puffs and cut out the cookie making step? It’s really not necessary to make this cream puff just time consuming extra money for ingredients.

I don't see why not, there are recipes out there for chocolate choux dough. But the cookie top is quite different than just a chocolate cream puff.
