Angel cake is also an awesome option to eat cake while on a diet, cause it’s the lowest in calories and rich in proteins 😊 Especially if you replace half of the sugar by a sweetener like erythritol and eat it with fruity toppings like berries or citruses!

In angel cake you only use the whites of the egg, so it doesn't contain any fats, and egg whites are basically pure protein and water (specifically ovalbumine) so yeah that's what I call rich in proteins 🤷😸 At least in a hypocaloric diet of course, I'd not recommend that for bulging 🤣

You can really see the difference at home too My mom always buys cake mixes for my dad, only eggs and a form of fat should be added. She melts the butter and throws the eggs and flour in together and mixes it, simply because she wants it be done quickly (she doesn't like baking but making cakes like this is cheaper than buying glutenfree ready to eat ones) I on the other hand often make the cake by first whipping the eggs up until frothy and adding oil, or i cream up the butter instead of melting it and then folding in the rest (also once again whipped the eggs) The difference is usually that my cakes are a lot lighter and melt in your mouth and my mom's are denser and richer in flavor. So it's a good thing i usually add fruits to the mix as well since fruits go better with lighter cakes imo (think of apple, apricot, pear or peaches)

I recently made a chiffon cake and it was exactly as you described! It also looked like it was oily at first (the tin was slightly greased just in case as it was for an exam) but it was still that fluffy and moist as you said!
