It feels criminal to eat food like this with silverware - thats the sort of meal you eat by the water with your fingers and maybe a bit of bread to sop up any leftover sauces.
(I'm 100% including the mashed potatoes in that statement; food is more interactive eaten by hand, and scooping mashed potatoes up by the fingerful is fun as well as filling).

Any fish if you broil it will work
You should put uncooked rice in your salt and spice shakers. It absorbs the humidity. I live in GA and have always done this. It helps for sure.

I used to do it with chicken and make a chicken jus heavily laden with butter. So this was a similar method but sans butter

I love seeing you cook. Reminds me of my grandparents cooking. This looked a lot like one of our Italian family meals but we never had fish, too expensive in so cal. Maybe a meat and some kind of strings beans with a Maranara sauce. Oh man it’s good stuff. Hope to try the gravy one day I’ve got it bookmarked under fish recipes
