Why did the instructor set the machine to factor 10 drag without any explanation. This is probably not the best setting for 99% of users, especially for a 15 calorie intense burn. The drag factor is so high that most people will not be able to get going before others have finished on a lower drag factor.

Your Right. Most People Would Do Better On Level 3 Or 4 For The Benefit Of Technique and Form.

I mean do you see how big he is? Of course he's gonna do higher than a normal person. Just go at your own pace and strength obviously.

It's a Concept II and it has some "peculiarities" that many people don't know, including the Concept II rowing machines.
I see people every week who try out the Concept ski erg or rower, set it at maybe 5, give a few timid pulls to test it, feel that the resistance is not enough, up it to 7, repeat the test and end up at 10 before concluding that the machine has little resistance or is not working.
They simply don't know that that there is a minimum effort to be made before enough air is entering the machine to get any real resistance.
The right drag factor for a session also depends on your muscle strength v your aerobic fitness level and the nature of the session.
You can say "it's not rocket science", but it ain't nearly as simple as you seem to think it is.

What is the best exercise to approximate the benefits of ski erg if one doesn't have access to it?

It's not a hard or original exercise to emulate - Caroline Jordan uses the body motion during one of her fitness routines here in YT, at about 10:20 or so...Feel free to add dumbbells at a weight you can manage.

If you have any cable machines at your gym you can go with a medium weight and put a bar on the cable and pull it down from overhead. I'm too tall for most cable machines though to do it like that.

why stand up on your toes? It totally has nothing to do with the core mechanics of the movement at least not on this machine. It's like running while throwing punches. Sure, do it if you want.
