How To Make The Perfect Pita Bread

  • Back to basics today with this 6 ingredient pita bread recipe that you must save so you can make this over and over again. This recipe makes 25 good sized pita breads that will give you 50 pita pockets when cut into.
    Method: Mix together 1 kg Pembe all purpose flour with 2 tbsp yeast, 2 tbsp sugar and 2 tbsp salt. Add 600 - 700ml warm water to it and mix. Knead into a soft dough and then add 2 tbsp oil and knead again. Cover and rest for 1 hour or until doubled in size. Divide the dough into 25 equal pieces and then roll each piece nice and thin or to a thickness that you desire. Dry roast on a pan until the bread puffs up and then slice it up and stuff with your choice of filling.

    Do you know that temperature the surface of you pan is when you put them on? 400F, 500F? I have a hard time getting mine to puff!

      Can you share any more details of how you get the pita to puff up? Is it in the way it's rolled out? I did everything you said but mine stayed flat, except for a few bubbles. My yeast was very active and the bread itself was very soft & it's still delicious, but we had to use it folded over, instead of being able to fill the pockets with our hummus & tabouleh. Thx for any suggestions you can offer. What diameter did you roll them? I tried thick and thin ones. Thx again. I'll be forever grateful if I can master this recipe. It's a big jump over buying the dry stuff from the grocery.

    Two table spoons of yeast, do you activate it in water first before mixing in?

      if you use instant yeast or easy bake yeast you don't need to activate.

    I tried the recipe yesterday and I was quite disappointed with the measurements of the ingredients for the dough. With how it's written here, the dough comes out extremely dry and doesn't stick together at all! I had to double if not triple the amount of water and olive oil and even then my dough wasn't as soft as yours in the video. Once in the pan, the pita bread didn't rise at all. Only plus was the taste - even not having risen it tasted very good👍

      Hi there, thanks for the feedback, I apologize as I put in the wrong amount of water, it should actually be about 600 - 700ml of water. Hope you try it again 😊

      Pembe is a Kenyan flour but you can use any

      I only got 2 to puff somewhat, of the half-recipe I made. So I haven't tried again. I've asked the author but no answer yet. So have others. Do we roll it incorrectly? What is the secret? There must be one. Ppl sell it and it's puffy. No one is talking, lol

      @TheStaffOfLife hello! The trick I use is roll them thin and rest them for a few minutes before you roast them on the pan. When cooking the pita breads, cool for 30 seconds and then as soon as you see bubbles, flip it over and as soon as you see an air pocket, press on it with a spatula and it should puff up.
