Oh ya - I doubled the recipe for my first time and it also turned out great... My vitamix *almost* overflowed lol. Delicious tip: don't scrape the chocolate cream from the blender. Add boiling water and a dash of oat milk to the blender and whir it again. It helps clean the sides of the blender and you get a delicious hot chocolate after your hardwork!

What I like about that though is that is using lemon juice in the cream layer and in my opinion is well placed because it balances the fat content from cashews and cacao butter. Hi, it is easier to cut it when it is defrosted. So, take it out of the freezer and remove from the mold. Put it in the fridge for a couple of hours and then cut it! :)
I made this cake today (very much in advance ) Sunday the 7th Aug 2022 n to cut for my boy’s 22nd birthday on Wed the 10th. So my question is should I leave it in the freezer till Wed or should I bring it down to the freezer section by tomorrow Monday the 8th. Thanks in advance

Hi, thanks for watching! The quantity stated is before soaking. If you are using fresh, soft dates, use the same quantity, just don't soak them. If the mixture is too dry, you can add a teaspoon or two of water until it becomes sticky.
@@pastrymaestra I did this and it worked just find. I had fresh, soft medjool dates and I increased the quanity of those and added a tablespoon of water here and there until the crust started to stick and form a ball.

Sure, you can melt it in the microwave on low heat or in the pan, also on low heat. As soon as it melts remove from heat. Before melting I advise you to cut it into small pieces if you bought it in a form of a block. :)

I'm puzzled, though, about why promote something as free from sugar, but use maple syrup as a key ingredient. Maple syrup is a refined sugar - it is pure sucrose from the maple sap instead from sugar cane or sugar beet. If you say sugar is nasty, but then use sugar in a recipe is very confusing.
Well, I hope you liked it! This cake is refined sugar free, and there is a difference between refined beet/cane white sugar or maple syrup that is only heated until concentrated enough so it doesn't spoil. Also, maple syrup in small quantities like in this recipe is well tollerated by my diabetic friends, so it doesn't have the same impact on the body like regular white sugar. If you still don't want to consume sugar at all, you can always choose stevia or other non carbohydrate sweetener. :)
