The best answer is that Pompey was Pompey. He had no real ideological commitments, except to the preservation of the Republic (with himself as the foremost figure). His early career was contradictory to the professed aims of the Sullan project and that seemed to be acceptable to both Sulla and Pompey. He felt betrayed when the Senate tried to shoot down his Eastern settlement, so he formed a Triumvirate. Caesar upheld his end of the bargain, however, Caesar's successes in Gaul made him equal to or greater than Pompey in influence and power. I think that is the real reason why Pompey turned on Caesar. I prefer to think of the civil war faction opposed to Caesar more as Pompeians than the Senate since it was Pompey who brought all of the material strength, especially loyal legions, to the table.
