A natural for an Easter Train would be the K-Line Hershey's 100th Anniversary set. I lucked into one at a flea market about 10 years ago and with it's chocolate colored locomotive and candy-themed cars it's a cutie!
The do show up at train shows from time to time so keep an eye out for them.

I ended up with a "happy Easter" gondola that matches your boxcar example from a lot purchase. I had no idea they existed prior. I also hadn't considered an Easter display layout, or decorations in general. Fantastic idea👍👍

I keep thinking I should put a little display in my classroom. Middle school kids can be a bit difficult, but I think some would love to see a train running in the classroom. I like your idea about theming trains for holidays. Those silly Menards "candy" cars don't seem so silly now. BTW, I purchased some Menards rolling stock after watching your video about the 6464 boxcar line. What a fun way to get some long trains going without spending a fortune. They arrived yesterday and I plan on getting more over then next few months. I'm in a club with a huge layout so long trains make for some good rail fanning.

I can say with confidence, and experience, that middle schoolers and trains do mix well. This past Christmas season I had a dozen classic Lionel train displays in store windows throughout downtown Hartford, WI. Little kids loved it of course, as did the older generation that remembers when stores did this kind of thing. But I was surprised how positive the response was from middle schoolers and high schoolers. Particularly how accessories are tripped by insulated running rails, as well as Lionel's 'non derailing' switches.

I can think of another engine that would be perfectly “bunny” sized for an Easter train.
The Williams “Mighty Mite” or RMT “Beep.”
If only they were painted in pastel colors.
Williams by Bachmann also made O-gauge versions of their “Eggliners” a few years back. And guess what.
Easter was among the theme options.

For anyone that knows does the Menards steel track hold up pretty good with the heavier engines that Lionel comes out with likely in the mid 2000 thinking about switching over from fast to Menards tracks
Menards track is just as durable as regular tubular o gauge.
