If you've turned it to wash, it stops freezing, so all the frozen ice cream will come out, then liquid, and you'll see the top hopper will be empty, give it a quick wipe and pour in some water to rinse, then do a sanitization rinse.
This one has a refrigerated hopper in the top, so it keeps it at a safe temperature, there's a standby button on the front which will keep the mix in a safe temperature range, but wont keep it frozen, that's what you'd do if you want to leave it over night. then turn off standby when you're ready to serve again and in about 10 min it's ready to go
We sanitize the machines at our facility. We don't expect our customers to do that. We ask them to rinse them out so they don't make a mess for transport back to our shop.

We don't use the dairy based mix in our machines, we use a powder base, it's shelf stable and doesn't require refrigeration,

Is there a limit on how long the machine can stay on? Like there is still a lot of ice cream left in the machine and you don't want to go to waste
