I realized recently that I don’t care for salads for the same reason I don’t care for casseroles: it’s the same bite, all the time. The entire meal tastes like one thing. I get bored after 4 bites! I love veggies, and I’d rather have the veggies separated in my plate so I can have variety. The ingredients in casseroles are typically good, but I’d rather have them individually on the plate. Once I figured that out, I became much less ashamed about not caring for salads. On the side is fine, but I’m not gonna eat a big bowl of it.

That’s definitely a valid opinion for you. I feel like personally I can get salads with a lot of variety and different bites, just gotta add a lot of different textures and colors (fresh leafy greens, raw vegetables, chips/croutons, beans) and I find there is plenty of variety between bites. I really don’t care for the salads that are basically lettuce and dressing, those are boring, basically water, and won’t fill you up or be enjoyable.

I made this last week for the first time, with a few tweaks... I used limes instead of lemons (at least 6 good sized limes to get enough juice), and I added a couple avocados to the blender to make the dressing creamier. I also used cilantro (one bunch) instead of basil bcuz it's my fave (& I'm not a basil fan except for in marinara, lol), added a good tsp of fresh ground pepper along with the salt and used my food processor to chop the cabbage and cukes really finely along with a couple jalapenos I added for a spicy kick. It was actually really delish with tortilla chips! My tweaks gave it a mexican tomato-less salsa vibe. Everyone at the get together I brought it to LOVED it, and the huge bowl was gone, give it a try!
Edit... forgot one of my tweaks, I've used parmesan cheese and cotija cheese instead of the nutritional yeast. They both worked great, I couldn't tell too much of a difference between the two

Yea at the end of the day its a salad of raw cabbage, and that can be tough for people to eat flavour wise and even on your stomach. I do enjoy the taste of raw cabbage and Brussel sprouts but I know they're rough on my stomach raw, cooked is fine! If I were to make any part of this I would make the dressing as is and either mix in the chives and green onion into it after blending, or just be sure to have the chives, green onion, and cucumber as a topping for mixed greens like you said. Maybe a trick to make the cabbage more tolerable or hidden is to chop it smaller that everything. I don't love chewing on a big piece of cabbage but its almost like the texture or chew is different when its smaller

This looks good. I'd swap the cabbage for mixed greens and half the acid in the dressing, or use a diluted ACV instead of lemon juice. I'd add green apples and pecans too, and maybe chickpeas. I feel like this would work well over brown rice for some reason, like the freshness would compliment the mild earthiness of brown rice.

    I don’t like salad much
    I haaaaated this salad.
My favourite salad is a salad that makes me wanna eat it all the time. It’s spinach and any other leafy bois you like, cherry tomatoes, toasted almond slithers and pine nuts, roasted pumpkin, cucumber, sometimes avocado, then the dressing is balsamic vinegar, olive oil, salt n pepper, some honey or brown sugar, and some garlic and onion powder, you just measure with your soul, and mix until it’s emulsified. Mix it all together and enjoy

Wilted/sauteed cabbage is actually super yummy.
Wilted cabbage with olive oil salt & pepper is really good on its own so I bet it would be awesome with the green goddess dressing.
(Raw cabbage isn't my jam either)

i think its better to cut very thin slices/ plane the cucumber and cabbage, instead of chopping it into this chunks - also here in austria we salt the sliced cabbage and let it sit for an hour, "massage" it a bit, and rins the water afterwards, so it becomes softer!

There's a salad dressing brand called Green Goddess and I was wondering if this was going to be some promotional thing for that. Guess not since you had to make your own dressing.

I kept thinking there was avocado in this recipe somewhere. I'm strangely disappointed to learn there isn't??
I think if a couple avocados got added either straight to the salad or the dressing and putting some cilantro in there it'd be boss af.
    Also probably less cabbage. 😂

I will say that her style of cutting up vegetables have really made me eat more salad. I'm not anti salad but I get tired of eating salad and I've also been eating it with tortilla chips. Sometimes I just do a basic iceberg, green onion and tomato with her lemon vinaigrette. Goooood. I wasn't a real fan of the Green goddess either

Yes, it is true that by roasting or baking you lose some of the nutrients, however, cooked veggies get absorbed faster and more efficiently. Raw veggies are packed with nutrients but your digestive system will not absorb most anyway because it is not designed to do so. Also, if you saute the spinach your body absorbs 3x more calcium than consumed raw. Balance raw and cooked is key.

I'm a salad hater, usually, but my in-laws made a salad for me to go along with my curry, one specially made for me as a vegan and it was soooo good. It was so basic but it was diced cucumber tomatoes, red onion and sweet corn and no sauce or anything was needed as it was soooo good. Idk why it was good, but I think the sweet corn really pulled it together. It also looked so time consuming but they have been sooo supportive of me being vegan, more than my own mother, who threatened to kick me out when I first went vegan🙄.
