Do away with the u-bolt and just drill holes for the end of the turn buckles into the wind deflector.

How well do the poles hold up to the radiating heat from the skottle?

No issues with the ski poles. I upgraded to some really strong, telescoping legs off of an old tripod and they have been great.

While my weapon of choice is a flattop griddle I am glad to see your build as the price for a plow disc cooker is stupid high
For the adjustable legs ya may want to check makerpipe as the have some threaded inserts for conduit that may make it even simpler
