How To Fillet a Whole Salmon - How To Make Sushi Series
HTML-код
- Опубликовано: 28 фев 2014
- Master Sushi Chef Hiro Terada shows you how to fillet a whole Bakkafrost Faroe Island Salmon with ease. The main thing is to of course start with a very sharp knife. You'll also need a pair of tweezers that can remove the bones that are still set in the meat once you remove the main bone that's down the center.
One important thing that we don't show here is when Chef Hiro removes the scales from the fish. It's a simple process using a fish scale remover. Just use the tool and from from tail to the head in a consistent motion until there are no more scales.

There's something really soothing and satisfying about watching a fish being filleted.
If the fucking fans are off it would've been a great asmr
You can really tell when someone respects and loves his ingredients.
i know what u mean
It's the way you handle the knife. Where you make sure you don't bruise the meat, you don't over cut, where every cut is clean and decisive. It's more than just techniques. It's about respect.
+Hitori06 This is mediocre knife work and butchery at best.

Chef hiro seems so humble unlike the other chefs on youtube who show off their skills with sour face. Btw thanks for your videos! They're very entertaining and useful :)
MsDoubleuD The only other Chefs on youtube with sour face is that British guy (Gorden?). I seriously haven't met ANY other chefs like you mentioned.
I found this video 3 years ago and my head chef left after 1 week of opening my restaurant. So we had to watch your video on loop and tried filleting oir first fresh salmon. Thank you so much.

I think salmons are the most beautiful fish ever
Try blue marlins
Kim Kimi the meat of the salmon is beautiful
tried blue marlin and salmon. the first class salmon melts in your mouth and the flavor just burst there. blue marlin is delicious too but salmon is better for me.
geb 14344 I also tried cod the fish and it's dry and salmon is way better
Kim Kimi try mahi mahi instead -.-
I cut my first salmon today, thanks Hiroyuki. Your tutorials are awesome.
You've truly inspired me to start making sushi on my channel, I've learned so much from you, and thank you Chef Hiro. I've always done, American dishes, from burgers, steaks, sandwiches, to BBQ, Italian, French, Mexican dishes, but being a massive lover of Sushi, I never thought I could make it, and I've learned so much from your channel, Thank you again Chef Hiro... cheers.
Am I the only one who thinks these fish are unbelievably beautiful on both the outside and inside?
What a beautifull fish. And so fresh. We don't get fish that good here.

I'm from Argentina. I live like 30 hours from the nearest sea shore so I guess it would be imposible. I love sushi but I haven't had top quality sushi in years. Anyway. Sick knive skills.

Yea I won't like about that. I've been all over the world and the meat here is some of the best you can try. Same for you all. Your chanel is awesome.

It's a beautiful whale indeed :o
That fish is not fresh.... Look how sunken its eyes are. And The eyes aren't glassy like they should be.

Afternoon
This is so satisfying to watch. It makes me want to learn how to cook just so that I can buy a sharp knife to cut up fish like that. 😍
But it also looks really tasty.
The key is not buying a sharp knife, but keep your knife sharp. Every cook need some basic sharping skills to do his work. I'm studying it and it is not easy.
This is oddly calming! It's like meditating up in the Himalayas.
Captain Obvious This might be caused by the back round noise. Some noise patterns calm some people down. Like rain on a roof for example.
Turn the sound off and see if something changes!
omg your so good at cutting the fish looks so satisfying please make more
Omg it is satisfying
So right m8
The most satisfying part is when tge cut off the stomach lining and tge noise it makes, its like wet paper ripping.

Salmon* your welcome
He's referring to the author Salman Rushdie. You're welcome.
@@humorpotamus i thought it was King Salman
It's watching an expert do it so well. It's reminds me of skinning a sheep. Takes a real expertise to do it.
After watching this i jumped into pacific ocean to catch a fish
This isn’t a wild salmon lol. It’s a fish that isn’t even found in nature.
Or it would say what kind of Salmon it is
Jaden Phair-Williams so you are saying that this salmon they are cutting up is not in the ocean at all you idiot
Pl
John micancy 😂😂
I don't know if I'm the only one who feels this way, but whenever I see salmon, I feel like nothing can be better. I simply love it, and watching this is really exciting. That color is so perfect, and it looks so good... I even feel like biting it like it was an apple. I must sound crazy, but food is something I feel passionate about, and salmon is probably the reason why
I prefer beef 🥩
jesus his knife is so sharp it slides through the fish and my knifes at home struggle to get through a banana :/
XD
Ikito Husky LOL
Why u cut banana?
Same to you
You may need to double check if you're actually hitting the banana.
Vividly remember watching this video repeatedly 4 years ago.
I am back again just cause it popped in my head suddenly.
relaxing and scrumptious stuff indeed
It’s so mesmerising to watch a master sushi chef just fillet a fish so efficiently
u know you're hungry if you're browsing through random food videos
lol this made my day
true! LMAO!
lol yeah, bout to have salmon
Ironlings its the munchies
yes!
Why is watching this so satisfying... :)
There was a study done not too long ago that found the sight of raw meat had calming effects on most men. (I'm sure it has the same effect on some women or anybody in between as well, but it seemed most prevalent in men.) Something to do with evolution and how once the hunt was done we could relax more. I'm a vegetarian and I still get hungry and an odd sense of satisfaction out of watching something like this. Genetics are a powerful thing haha.
and eat the sashimi with wasabi and japanese soy sauce... that'd be satisfying
SO FUCKING HUNGRY AFTER EVERY VIDEO
"Let the knife do the work"-Ramsay

Ramsay is the best cook too
Ramsay did a horrible job filleting salmon as compared to Chef hiro
@@omerahmaad1. The fish was smaller than Hiro's. 2. Hiro is Japanese so it doesn't count. 😅

As a chef myself, the sharpness of his knives is satisfying
Hi hiro I'm a big fan of your channel. Because of you I manage not only to make my fiancee eat raw seafood but actually to enjoy the and to be impressed on how I cook it, especially the sushi... This week we went to Japoneses / Chinese restaurant and we got to enjoy some really interesting dishes, especially a caramelized chichen. Looked like a chichen tempura with sesame seeds in a sweet caramel sauce
I love your cutting skills and that salmon is so fresh and pink. I love seeing you expertly get that beautiful job done.
I have little to no use of the things you show in these videos but they're so fascinating I can't stop watching them.
I just love the sound of a fillet knife grinding against the bones of a fish.
I don't know why it's satisfying I think it's the crunchy noise
CRONCH
The knife is so sharp and he deboned it so quickly. What an incredible talent.
I just wanna grab one of the chunks of salmon and take a huge bite out of it. Idk why but it looks so good to me.
That much raw fish must be really bad for you. And I dont think that much raw fish would taste good...
Cooked fish is good and better tasting though.
have you really tasted salmon sashimi? a matter of taste is personal matter, me, and maybe a lot of other people would enjoy a raw salmon, but i can't eat raw beef. while some people the other way around, and some like you might prefer everything cooked.
im no doctor but im pretty sure other mammals in the wild eat raws right? so i guess its fine if you can handle the taste, and accepting the risk of bacterias and worms etc.
yes cooking food might be healthier and safer, but doesnt always mean taste better
It twas a joke my friends. I would never eat that much salmon.
huh? but i'd love to take a huge bite of that raw fish tho
Phøenix FøxTail It's not bad at all. Have u heard of sashimi
"How are you?"

Thanks very much for sharing this video. I was very apprehensive about fileting a salmon as I did not want to ruin it. I followed what you did step by step and the fillets turned out like a pro. Thanks again.
Love the camera work. Just smoothly following along the cutting knife as it slices through the fish. Yum!

If there is one thing Hiroyuki knows how to do, it is to fillet a fish! Very impressive!
I'm from Alaska and have filleted a lot of fish. This guy does a very good job and wastes little. Despite the criticism here, the belly meat and back meat is salvaged for other uses. Look at the backbone and see what little meat is left on there. That is what is actually thrown away.
***** head makes good soup :3 beautiful salmon and beautiful knife work too
***** head can grill with salt and chilli, or grill with salt, pepper, garlic, oishi
Tin Le
He can also make a fumet with the parts of the fish that he's not going to use. I guess they don't because their specialty is sushi.
Fabricio Osuna cut head into cube and make hot and sour hotpot, and don't forget saké on the side

These vids are so relaxing to watch and also makes me want to go fishing again.
Ye same I love fishing 🎣🎣
yeah i know right every time i watch some of his vids i feel calm and hungry
I watched these vids for quite a while, and see comments that say he isn't a skilled chef. I would pit this man against any other chefs and he would win, every time. I fish in my spare time, and filleting a fish is one thing I've never learned to master. I can catch well, but well, and cook well, but when I filet I mess up, without a doubt. This man is extremely skilled, and if you think otherwise, you can fuck off.
*gut, not but 😂

Guido Fawkes I'm 14 and I can fillet a salmon as good if not better than him
Jay Spence Pretty sure he can do it faster than that, most likely slowed down for the sake of the video.
