How To Fillet a Whole Salmon - How To Make Sushi Series

  • Master Sushi Chef Hiro Terada shows you how to fillet a whole Bakkafrost Faroe Island Salmon with ease. The main thing is to of course start with a very sharp knife. You'll also need a pair of tweezers that can remove the bones that are still set in the meat once you remove the main bone that's down the center.
    One important thing that we don't show here is when Chef Hiro removes the scales from the fish. It's a simple process using a fish scale remover. Just use the tool and from from tail to the head in a consistent motion until there are no more scales.

    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989.       It's the way you handle the knife. Where you make sure you don't bruise the meat, you don't over cut, where every cut is clean and decisive. It's more than just techniques. It's about respect.

      tried blue marlin and salmon. the first class salmon melts in your mouth and the flavor just burst there. blue marlin is delicious too but salmon is better for me.

      I'm from Argentina. I live like 30 hours from the nearest sea shore so I guess it would be imposible. I love sushi but I haven't had top quality sushi in years. Anyway. Sick knive skills.

      The key is not buying a sharp knife, but keep your knife sharp. Every cook need some basic sharping skills to do his work. I'm studying it and it is not easy.

      Captain Obvious This might be caused by the back round noise. Some noise patterns calm some people down. Like rain on a roof for example.

    I don't know if I'm the only one who feels this way, but whenever I see salmon, I feel like nothing can be better. I simply love it, and watching this is really exciting. That color is so perfect, and it looks so good... I even feel like biting it like it was an apple. I must sound crazy, but food is something I feel passionate about, and salmon is probably the reason why

      There was a study done not too long ago that found the sight of raw meat had calming effects on most men. (I'm sure it has the same effect on some women or anybody in between as well, but it seemed most prevalent in men.) Something to do with evolution and how once the hunt was done we could relax more. I'm a vegetarian and I still get hungry and an odd sense of satisfaction out of watching something like this. Genetics are a powerful thing haha.

    Hi hiro I'm a big fan of your channel. Because of you I manage not only to make my fiancee eat raw seafood but actually to enjoy the and to be impressed on how I cook it, especially the sushi... This week we went to Japoneses / Chinese restaurant and we got to enjoy some really interesting dishes, especially a caramelized chichen. Looked like a chichen tempura with sesame seeds in a sweet caramel sauce

      That much raw fish must be really bad for you. And I dont think that much raw fish would taste good...
      Cooked fish is good and better tasting though.

      have you really tasted salmon sashimi? a matter of taste is personal matter, me, and maybe a lot of other people would enjoy a raw salmon, but i can't eat raw beef. while some people the other way around, and some like you might prefer everything cooked.
      im no doctor but im pretty sure other mammals in the wild eat raws right? so i guess its fine if you can handle the taste, and accepting the risk of bacterias and worms etc.
      yes cooking food might be healthier and safer, but doesnt always mean taste better

    I'm from Alaska and have filleted a lot of fish. This guy does a very good job and wastes little. Despite the criticism here, the belly meat and back meat is salvaged for other uses. Look at the backbone and see what little meat is left on there. That is what is actually thrown away.

    4 years ago I worked at a place were the people abused me, they gave me physchosis I couldn’t sleep at all. This video calmed me down and I was able to start healing and relaxing. And this video in part helped me out a lot. Thank you!

    I watched these vids for quite a while, and see comments that say he isn't a skilled chef. I would pit this man against any other chefs and he would win, every time. I fish in my spare time, and filleting a fish is one thing I've never learned to master. I can catch well, but well, and cook well, but when I filet I mess up, without a doubt. This man is extremely skilled, and if you think otherwise, you can fuck off.

    Man, that is a tasty looking salmon.
    My uncle used to be a partial owner of a private lake and he'd take my cousin and I fishing there all the time. If only I'd known how to properly filet a salmon back then.
