Good Day Chef, I could not agree more with you about using the frozen juice concentrate. I've been using it in my pineapple upside down cakes for years. The curd came out perfect, definitely gonna make it for a sauce to go with Coconut cheesecake, Pina Colada style. Concentrate is also great for making homemade Italian Ices, only 2 parts water instead of 3 and it has the consistency of Italian Ices.Also, no added sugar. The pineapple curd sounds interesting, it really can be used as a filling for macarons, icing for any cakes.🍍 Although pineapples make me itchy (due to skin asthma), but having no problem as a curd, filling, dessert and juice. I love eating pineapples occasionally.💖
