On WINDOWS to remove that spot in the center on images I had to box select like he did and pick shape builder tool with everything still selected. Hover over that area when fine grid appears hold alt and click LMB to remove. Hope helps 24hrs into illustrator and this was giving me issues hope this helps someone, that don't what hold options means. I think keys are different for Mac users, never owned a Mac 🤷🏽♂️!!

Remove the back ground with the direction trace tool did not work on Illustrator 2020. Followed exact steps maybe it is the image I used?

Once vectorized, correct! For print make sure your colour mode is CMYK.
