And can you demonstrate some Chinese recipes that incorporate spongy tofu, because I don't know how to use it except for mock ground meat? I really love your channel and hope you continue to make these excellent videos :)
I have burger business using tofu, without other method it taste delicious already, I'll try the soaking in boiling one, then I'll come back here to share the results

This is such a great video! While I've used the freezing technique, and have seen recipes that boil tofu, I wasn't aware of the other methods. I love tofu, and the techniques shown in this video will make cooking tofu even easier. Thank you so much!
There is a lot of good info here, but I find it difficult to follow when you don't take pauses between sentences. It just sounds like one long sentence in a high pitched tone.
One of the doctor said tofu is fermented, I don't know how it is fermented? Do we need to ferment tofu separately or it is fermented when we soak soya overnight?
My microwave has a defrost button, so I just use that function. I don't really know what microwave you use. Defrosting could take 2-3 minutes on both sides roughly. And it depends on how powerful your microwave is and the size of your tofu. So it really varies... Maybe you also need to wrap it up with a paper towel just in case the edges get dry. Alternatively, you can just leave it in the fridge to thaw naturally, but take a bit longer time. I hope this can help 😊

just one question: do you freeze the tofu in the original package with water? or do you remove the water and put it in another container?
Should we keep the tofu in the freezer along with salty water? Or just only tofu without the salty water in the container? I am confused.

The way it was made goes through a whole lot of process making it fermented, almost 24 hrs
