That's actually a super common song format in jazz, if you weren't already aware. Kind of the "default" song form in small ensembles like this is to play the "head" (essentially the main theme or motif of the song) at the beginning of the tune, then everyone does some solos, then you play the head again and that closes out the tune. Most jazz tunes can fit on a single page of sheet music and just repeat the same chord progression (which may be complicated, see Giant Steps for a classic example) for the whole thing.
To answer the question in the description, from the translated commentary of the OST: "The melody uses a simulation of a west Asiatic tribal instrument called a zurna.” (Meguro). Amazing cover!
