Your dead man switch could simply disable the motor controller, It couldn't be too hard to work out. e,g, make it drop the logic supply on the esc. For a kill switch you can short out the supply which would force the fuse to blow.
what is your battery configuration for this efoil, how do you connect them, what is your total Volt and A-h? Sorry I dont speak english very well and I miss some words on minute 2:00.

I am looking for a 100kV inrunner motor that runs at 44V and with about 5000Watts. The diameter should be less than 70mm. Motors that are available currently are unsuitable because they are either out-runners, so not waterproof-able or they run too fast with low torque. They are made for RC planes. Air is thin, water is thick. So we need a lot of torque and low speed. Props have cavitation at high speeds.
Oh yeah. The sea makes this much easier, and that the motor is underwater. I just hope the ESC does not blow up, that is most expensive, and I had one blow up on me before. Its like new years eve fireworks.
APS 70110 and APS 56115. However, the first one only has 3000W, and the second one needs 110V DC, which is to dangerous for my taste. So I use the 70110 for now. At least I am testing it and see if it could work. Once I know the thrust, Ill build the motor pod.
Damn Max, you're really going for it! That's awesome. I can't wait to see how it turns out. Your ESC will have some sort of cut off switch you can use as an e-stop. I know it wont be as* safe, as it will still be feeding power up to that point. but at least it will stop the motor from running away on you. Also you might want to consider putting a stringer down the center of the board, it will add a surprising amount of structure and rigidity to the board. If you get tired of waiting for the specialty motor, I might have some suggestions for some off the shelf motors you could modify.
Thanks. I pretty much god the motor now. There are two made by alien power systems. One is waterproof and the other one is easy to waterproof at home with epoxy. I also found a 200A relay for electric forklifts on ebay. Made in the UK and great quality.
It was haha. There were a ton of patches and overlaps. The glassing was alright, but then there was a lot of sanding and filling. I am glad that everything will be painted over.
So far 200€ for the batteries, 30€ for foam, 50€ for the case, 20€ for the aluminium box, 200€ for all the electric stuff, 100€ for glassfibre and epoxy, 500€ for the wing. 1100€ total. I guess another 600€ for the motor and the ESC. Not cheap.

There are several solid state options that can switch 200 amps very cheaply :). An IGBT will likely work for your application.

200A relay should be quite cheep if you look for a car starter relay.

Oh yeah, getting hurt seems possible. I will wear a full wetsuit, upper body protection, gloves, shoes and helmet.
