We are blessed on this cold evening in the New York City area at 6pm, 60 degrees, 6 miles per hour wind, and 44% humidity, the great Flo Chinyere has prepared, this sumptuous, tasty, and healthy “Nigerian Goat Meat Pepper Soup with Agidi (with Corn Flour)”, sprinkled with fresh green leaves, and steamed rice! Miracles happen in the Pan-African food world! 👋🏾In order to preserve my scent leaf, basils, or other various herbs/leafy greens. I love to blanch them, it preserves the flavor and color after the enzymes have been killed off. Blanching only takes a few seconds in boiling water, then into a cold ice bath to shock them. After that, one could store them in the freezer by drying them first and placing them between wax or parchment paper. My favorite is to blend (using a blender) them and put into ice cube trays/silicone molds (remove and store in ziplock, etc). Anytime they're needed, they are ready with their fresh, green color!👩🏾🍳🌱👍🏽😋🌿✨️😍😋💚

I think you used chunks of onion vs blended onion to keep the consistency of the pepper soup smooth but still “extract” the flavor of the onion. I think 😅
