  • I’ve been making Melomakarona - Greek honey cookies, for as long as I can remember and I’ve finally perfected them. Make sure to use a great quality delicate extra virgin olive oil and Greek thyme honey for best results. FULL RECIPE BELOW.
RECIPE: MELOMAKARONA - GREEK HONEY COOKIES
    Dough
1 cup Good quality fruity extra virgin olive oil olive oil (250 ml)
    100 gm sugar ( 6 Tbsp)
90 ml orange juice (6 Tbsp)
    25 ml brandy (2 Tbsp.)
    390 gm pastry flour ( 3 cups )
    120 gm fine semolina (3/4 cup )
1 tsp. baking powder (5 gm)
2 tsp. ground cloves (6 gm)
2 tsp. ground cinnamon (6 gm)
    ¼ tsp. Allspice ( 1 gm)
    Nutmeg to taste
1/2 tsp. baking soda (2 gm)
    Syrup
3/4 cup Greek amber honey (175 ml)
    3/4 cup sugar (175 ml)
    3/4 cup water (175 ml)
1 tsp. ground cinnamon (5 ml)
1 cup finely chopped walnuts, for garnish (250 ml), optional
    * Additional Note about temperature of cookie . In video I said they were hot but I cooled them to warm before dipping them into the hot syrup. If they are too hot, they will fall apart.
Preheat oven to 350 degrees F
Whisk together the wet ingredients, with sugar and spices, in a medium bowl. Over a piece of parchment paper, sift flour, baking powder and baking soda 3 times.
Add the sifted dry ingredients to the oil mixture and stir with wooden spoon until mixture just holds together. Dough will not be fully smooth but should hold together. Note: texture of dough might vary depending on the protein level of your flour.
Pinch off about 1 1/2 tbsp. portions of dough (25- 27 gm ) and form into little flat oblongs (football shapes). Place on a parchment-lined baking sheet 2-inches apart. Bake in oven at 350 degrees convection F for 25- 30 minutes, or until evenly browned.
    Syrup
Boil honey, sugar, water, and cinnamon for 8-10 minutes, until deep amber colour and slightly reduced. Remove from heat. While syrup is still hot, and cookies are warm but not HOT, using slotted spoon place cookies 6-8 at a time- into syrup for about 2-3 minutes, turning often to completely coat. Transfer to a large baking sheet or pan and arrange in a single layer. Sprinkle with chopped walnuts , if desired. Repeat with remaining cookies.
Makes about 36 delicious cookies( 25 gm each raw cookie dough )

Many years ago when my sister was a newlywed she made a batch of melomakorouna that were talked about ever since. It took her at least 2 decades to replicate her magic. After the first time they were never as good until maybe 5 years ago. She came over and helped me make a batch for Christmas and then I did a batch on my own. They were both phenomenal! She insisted on vegetable oil, but I have no problem with the olive oil. The magic is truly in the Greek honey!

    • @ChristineCushing
      @ChristineCushing  2 года назад +1

Ahh there are not silly questions. My husband keeps the extra syrup in a little jar and then heats it up and drizzles it on each cookie he's about to inhale.. ( hilarious). You can keep the syrup and bring it back up to the boil by adding some more water to loosen it up., It might start to crystalize ( common ) . I hope this helps.

    • @ChristineCushing

I have a question on the pastry flour measuring, 3 measured cups of my pastry flour is only 320 grams, I would need at least 4 cups to get to 450 grams as per your directions. Should I use3 cups or 450 grams?

    • @ChristineCushing
      @ChristineCushing  6 месяцев назад

It must be the protein level in your flour , so I would say to use 450 gm, that would be most accurate. Additionally , I would hold back 50 gm of the flour at first until you see how the dough holds together. Refer to the video for the optimal texture of the dough . I hope you make / love them. Still hard to beat baklava, in my opinion. Also like kourabiethes. Come to think of it, never met a Greek pastry I don’t love!!

I’m an experienced baker , and followed the recipe to the t but the fluid quantities are not correct! I added double the amount and the dough still needed more to come together. The result was dry cookie that didn’t absorb the syrup.

I'm sorry to hear that your cookies didn't turn out well. This recipe works, as you can see from other people's comments ( who arent' big bakers). Did weigh or use cups to measure flour and did you use the semolina? Also the dough is meant to be soft, as per video.
I'm trying to trouble shoot with you to find out what went wrong. Thank you

@@najatskitchen that’s weird. Something else must have been off. This recipe totally works and actually my sis yet in law just made them last night and they were great. Was the dough totally liquid ?

The syrup has to be cold, NEVER drip hot cookie in hot syrup. No to cinnamon powder, sticks only,. Also you forgot to add cloves and orange to the syrup, this is the authentic Greek recipe!!

I really hate it to have to make remarks to such a lovely cook, but u left out one of the ESSENTIAL ingredients: ORANGE! Juice and Zest. Some also add some lemon zest to the Syrup too. Melomakarona is honey n orange flavour by default
    Additionally, nutmeg is rarely added

Olive oil is ideal in this cookie. When you use a good quality Greek olive oil it is fruity , spicy and really completes the flavours. Thanks

I'm so sorry your cookies did not work. As I have just made them this week, I am wondering how you measured the ingredients , did you use semolina, soft flour etc. ? This is a really great recipe. Thank you
