Grandma's Best Homemade Dinner Rolls

- When grandma wasn't able to do all the holiday baking anymore, the responsibility of making her incredible dinner rolls got passed down to me. (No pressure, right?)
Truthfully, I didn't mind one bit because grandma's recipe is the best there is! Over the years I've even tested and adapted it to where they're the perfect combination of fluffy and nutty (from the fresh ground spelt flour), and then made irresistible with the freshly melted butter slathered all over the top as they come hot from the o
This is one recipe you'll definitely want on your holiday tables this year, but you will certainly want to give them a try before then!

I like to put the oil or butter in the measuring cup before pouring the honey. Makes the honey slide right out and not leave any behind in the cup.

I want to make these but will be using pre ground flour do I replace the 2 1/2 cups of spelt grain with 3 3/4 cups pre ground spelt flour. Do I also add the 1 3/4 all purpose flour? They look great. Recipe printed and ready to go! Ciara.🇮🇪Thanks.

Coconut oil??? I found that killed my yeast, and my bread wouldn't rise.
Oh darn - I doubt it was the oil. I've used CO for years - never an issue. I would guess it was yeast that was old. But could be other environmental factors. But might I suggest to add the coconut oil after the yeast has risen just with warm water and a bit of honey - no other liquids, just water and honey? Then add the rest of the honey, buttermilk, egg etc. Melissa might have a different take but when my yeast (I also buy it in bulk) is getting up there in age, it does raise differently.
Give that a try and see how it works.

OMG Melissa what beautiful rolls. I too love cast iron. When my hubby and I married 23 years ago he had a piece of property that the previous owners were garage sale fans and kind of hoarders. I found a wash basin outside full of cast iron! Best find a Griswold hammered and hinged chicken fryer in just about mint condition. Looked it up several years ago online value of $400.00. One man's junk another woman's treasure. TFS

I love rolls! I can’t wait to try these! I recently bought your books and I love how connected to God and nature and the olden days that you are! Everyone in my family tells me I grew up in the wrong era because I like to can and I want my kids to know how to survive on their own. I grow a garden and have chickens. My great grandparents had all past away by the time I was 12 but I still remembered the gardens and and stringing green beans. It seems to have stopped with that generation. My uncle who married into the family taught me how to pressure can vegetable soup and green beans for the last about 7 years and just this year I have learn to make jam and pickle peppers. So I’m bringing it back into my family. And I love watching your videos! My mom and grandma told me I remind them of my great grandma not afraid to learn new things! I am so thankful for those qualities!

So if using bread flour you use the amount in the notes on the recipe. And that is in place of both the spelt and the all purpose flour in the recipe? Or is that JUST in place of the spelt ?

Oh my Thank you for this recipe. I kept trying to smell it, because I love the smell of fresh Bread. But I noticed on your recipe it says rise one hour…shouldn’t you adjust it to rise one hour x 2? And adjust the total total time to 2 hours 27 mins? But as I said thank you so much for everything you share. 🍞🧈💕
They sure made good hearty food. With none of the rubbish in mist food now. I grow 95% of my food, as then its picked to eat 1 hr before.

I use Einkorn flour. Would you know if it is a 1 for 1 replacement for the spelt?
No, usually you have to adjust the liquid ratio more.
