  • Simple slow days of early spring in English countryside.
    Staying at my friends cute little village for a few days to look after her cat.
    Foraging for wild garlic.
    Making wild garlic cheese scones and butter.
    Spring took a while to arrive this time. I've been spending many rainy days at home, cozy with a book. I'm catching every little moment of sunshine as often as I can - it's still not a very common sight in English countryside today.
    Hopefully more brighter and happier days of spring will arrive soon to my corner of the world.

    Wild Garlic Cheese Scones:
    125 g wholewheat flour
    125 g plain white flour
    50g cold butter
    2 tsp baking powder
    1 tsp salt
    1 tsp black pepper
    60g wild garlic
    75g cheddar cheese
    25g parmesan
    100 ml of milk
    Preheat the oven to 200C/ 390F.
    Chop butter finely and mix with the flour by roughly rubbing it with the palms of your hands until it turns into crumble. Make sure the butter is very cold straight out of the fridge - I like to chop it up first and then store in the fridge while I gather all other ingredients.
    Then add baking powder, salt, black pepper, finely chopped wild garlic and cheese. Mix using a spoon or table knife to make sure the ingredients are not overmixed.
    Lastly add milk and mix again roughly by hand until the dough starts to hold shape. Transfer onto a flat surface and shape it into a disk about 2-2.5cm high. Either cut it like a cake with a knife to make triangular shapes, or take a cookie cutter or a glass bottle like I did and cut out round shapes.
    Lay onto a baking tray lined with parchment paper.
    Brush the tops of your scones with a bit of milk.
    Bake for 10-12 minutes or until the top of the scone is lightly golden.
    These are also freezer friendly - you can bake the amount you're going to eat and freeze the rest until you want to eat it next time. You will have to bake it for about 18-20 minutes from frozen.

      Yes, I've foraged for yarrow, goldenrod, borage, and last summer I found patches of caraway seeds & made my first rye bread & buns! 😊

      We still have snow, although the rains the last 2 days have helped melt quite a bit. I'm anxiously awaiting spring as well. Our winters are about 6 months long & I'm reading for warmer weather. We have wild leeks here in the spring in the northern part of Michigan, USA. The scones look delicious! 🌱🌷☀

      @@IamDaria It will, by the end of April or early May the snow will hopefully be gone by the aid of the midnight sun and by the end of May we will have a green world once more and so arctic summer. At this very moment it seems like a dream of a dream...I can barley remember how it feels not to live in snow...Must not complain though

    I've never cooked with garlic leaves, but the bulbs are essential for most savory foods. I have been to England only once, but hope to visit the kingdom again sometime. Beautiful video, as always.

      Wild garlic is slightly different, it’s not the same as the regular garlic leaves. Although I know some people use young garlic leaves to make salt. But wild garlic has a much milder flavour 😊🍃

      Aah I love this, it’s true that it’s just in our perception most of the time. It’s difficult to change your views and feelings about something you don’t particularly like (like this moment between winter and spring for me). Currently it’s raining heavily outside my window yet again, but the air feels so nice and refreshing. ☺️

    love wild garlic and it grows in my garden, i love it made into pesto on pasta, your scones look delicious. I live in Wales and i love it, so many lovely places, the weather this spring so far hasn't been great and i have missed some of the spring flowers in my garden as ive not been in it and they going over already. Spring is my favourite season as the world comes back to life.

    I understood from a friend in England (an artist in Hackney) that wild garlic over there is called 'Ramsons'? He has also foraged for it. (Have never seen it in real life and unfortunately for me - a lover of all things green 💚 - probably never will) ✌
