The secret to bagels is two things, the water and baking soda. There's a reason why nyc bagels are the standard. The city water there is almost like mineral water so when you mix the yeast with it, it gives it a very specific characteristic taste. When you boil the bagels make sure to throw in baking soda to the water, you want that boiling water to be alkaline so it gives the bagel a very nice crust. Good go! Try using mineral water to make the dough, and baking soda in the boil the next go. Lolol Trader Joe's is the best US grocery store! Cheap wine and good stuff in every aisle!
