For the height issue it seems like this would be the perfect candidate for the the ol' "couple of 2x4s under the legs should fix that" solution. It's not elegant, but it fits w/ the inexpensive and easily portable theme. You could even spray paint them black to match the stand. If not that than a few books or magazines under the feet should suffice provided you can match up the thickness on all four corners.
Not only the cross-bar is a fail, but you could buy three of those and do your triple-setup. But than it's not cheap anymore at all and you are better off with something more solid in the first place. I made my own monitor-stand with aluminium profiles and did some upgrades later. Now it's holding my PC, Buttkicker-amp, loudspeakers, VR-headsets, gamepads, USB-hubs, controller-boxes, power-supplies and I even mounted a small vacuum to it.

Sorry to bother but what do you mean exactly by 2x4s? Is that little boxes you can put under and how do i find those little boxes?
