    Love mason jars, hut also love Mylar for long term storage of beans, rice, peas , potato flakes etc flour

    You can also use the Food Saver jar attachment to suck out the air. I like doing it this way because I have had mixed results with the quality of oxygen absorbers.

      The Food Saver jar attachments are extremely hard to find unless you want to pay $60- $70 or more for them! Stores are all sold out. :(

      May I recommend an "Electric Mason Jar Vacuum Sealer" It will handle regular and wide lids. Mine came with a recharge cord. Fits on the jar. Yes, I have Ox absorbers, but do not use for jars.

    I make my own tomato powder. Its naturally bad to clump because its rich in sugar. Arrowroot powder is my solution. Works great for spice blends that clump. Loved your video!

      Hello! Thank you for watching. Yes...things are crazy right now in every way. We have definitely been able to lean on our food storage during this ongoing and increasing scarcity of foods. We've started our garden again. We mainly buy from local farmers and our food co-op that I manage...we only do occasional shopping at the local grocery stores nowadays. 😊

    Great video. It's not too long! You might be able to use moisture absorbers with the tomato powder just to keep it from clumping, not for long term. I'm using those to keep my working pantry dehydrated goods dry. My freezer is getting full so putting all my stock into kill bugs will be a chore. I can see why but still.

    Very helpful thank you. A question about freezing dried food I understand why we have to. How long do you have to freeze items? Do they have any moisture from having been in the freezer? New to this channel and prepping long term.

      Thank you for watching. You don't have to freeze but is a good extra step and additional "insurance " in protecting your food. I have had success both ways, freezing and not freezing. When I do pull out to thaw, I try to leave it out at least 12 hours to get it back to room temperature to reduce or eliminate potential condensation. Moisture is one of the "enemies" of dry foods for long-term food storage. Hope that helps. 😉

    I liked your video, but im just wondering what date does one put on the jar of canned food? The expiration date on original packaging or the date sealed in a jar?

      Thank you for watching! You can do either, or both. ;) The Mormon Home Storage Center put the dates that the food was canned. I don't put dates on mine, however. :)

    You can add some arrowroot in your dehydrated powders to prevent that clumping.

    hello thank you for this video.. my question is when you open a jar how long will it stay good to use?

      Thank you for watching. It really depends how often you open it. The absorber will reseal the jar multiple times as long as you quickly get out what you need and put lid back on. Once the lid no longer seals...meaning you can pop the button...that means the absorber has been used up and you need to put in a new absorber.     1. Do you have a list of the different items that you use these jars for?
    2. If you open the jar with the oxygen absorber it goes bad right? So you’d either have to repack it with a new one or eat the food? Correct?
    3. Why not use those pumps that vacuum the air out? Is this only for long-term storage then?

      Hi Karri! Thank you for watching! I'll try my best to answer your questions. 1. I don't keep a list of what I use the jars for. But I use them for: dehydrated vegetables like carrots & onions, grains, beans, flour, spices, etc. 2. The o2 absorber doesn't go bad immediately when the jar is opened, but the more the jar is opened, the more exposed the O2 aborber will get and will reduce its effectiveness. Sometimes I might transfer product from a big jar to something smaller if I am going to go through the product fast. Or sometimes I will just go in and out of the big jar with the absorber in it. When I empty a jar that has an o2 absorber in it, I'll sometimes toss it in a full jar (if the absorber still has life in it, i.e., hasn't turned hard) to get as much life out of it as possible so I have jars that have two absorbers in them at times. I can check the button on the lid to see if still sealed.

      3. I have heard and seen a lot about the vaccum pumps. Those look to be another great way to store food long-term and I've considered getting one. I think it is a good idea to diversify food storage methods. The dry canning with o2 absorbers are perfect for long-term food storage but can also be used for getting into as needed.     How long can you store food using this version of dry canning please? Will they store for 20 to 30 years if not opened?

      Should be good for 20+ years unopened as long as they are stored in cool, low humid and dark area. High heat, frequent light exposure, and high humidity are enemies of food storage.

    After you take the rice or beans out of freezer how long do they set out before canning?

      Best practice is to wait until gets to room temperature. Maybe a few hours after take out. I have canned grain shortly after took out of freezer-- probably should have waited longer as was still cold--but I didn't have issues with it. (But I dont plan on making that a habit! Lol)

    I made the mistake of buying O2 absorbers from Amazon. I opened the sealed package used them right away and put the rest into a jar. They never sealed my jars or seal the jar they were in.

      Did they come with a pink eye or some other kind of oxygen indicator? I haven't had issues with the ones I've gotten from Azure Standard or the Mormon Home Storage Centers. I am sorry to hear the ones you received off Amazon didn't work for you. 😔

    Also if you don't cook them you can still grow. Not all will be good after awhile but 6 years ago I grew a jar that my mom kepted for 13 years some grew some didn't but it still wasn't bad it was all veg. If they were split didn't try.

    How long do you freeze beans / grains before dry canning?

      Thanks for watching! When I do freeze, I do at least 24hrs...some people do up to at least 72 hrs. But because I am using oxygen absorbers, I am comfortable with 24 hrs. But once pull out of freezer, want to let it get back to room temperature before putting in jars. ;)

      I rinse them first and then I run mine through my dish washer for the sanitizing effect. But if you don't have a dishwasher, you can rinse, hand wash and then boil the jars and lids as you would in liquid canning to sanitize the jars and lids. Hope that helps! Thank you for watching! :)

      Hello! Thank you for watching and reaching out. If I am unable to pack food long-term, I put it in the freezer until I can get to it later. Foods that can be frozen are grains like; rice, wheat, spelt, etc, and flours. I don't worry about freezing pasta, etc, just more-so the whole grains that still have the complete nutrients that bugs are most attracted to. Hope that helps! 😉

      Thank you for watching! 😊 I've never timed it...but I'd say between 12-24 hrs more or less for them to be completely sealed. When I'm sleeping, I'll hear them pop overnight. It startled me the first time I heard it! 😆

      Hello and thank you for watching! Lack of oxygen does kill most bugs that aggravate us by invading our food...but there are some organisims and bacteria that are anaerobic. I don't always freeze my grains before packing...but I do put them in the freezer just in case I can't get around to dry canning/packing them right away. 😊

      Should last 25+ years as long as the stored food is kept in a dark, cool, dry area. The lower the temperature, the better... High heat, high humidity and light are enemies of food. However, I do like my clear jars so I can see at a glance what I have. But, can keep them in a dark area or get the darker 1/2 gallon canning jars. Thank you for watching!

      The smallest size absorber would be the quart size absorber available that I've found. It is fine to over-size your absorber. You just don't want to undersize them. I.e., I've used 1 gallon size absorbers for 1/2 gallon jars. But wouldn't want to use a 1 gallon absorber for a 5 gallon mylar bag. Hope that helps! 😊

    I'm trying to get started. 😩 But I confused due to differing information. Other videos say not to freeze because of conditions issues. And if you leave out after freezing your defeating the purpose because Now they are not sterile anymore. 😣😖🤯

      Thank you for watching. I'll do my best to answer your question and concern. Not everyone will have the freezer space to freeze large amounts of grains. I happen to have the extra space. I do freeze my grains if I can't get around to repackaging them in a short time frame. But I don't freeze all of my grains but that would be my ideal. But, big grain farms and warehouses don't freeze grains while being stored, most will keep the warehouse cool which helps with bug issues. If I wait too long to repackage them, they may hatch out buggers as not all insect eggs can be seen by the naked eye. The freezing cold inhibits and most times kills any bugs and most eggs. When I have frozen some grains and am ready to repackage into jars or mylar bags, I take my grains out of the freezer and let them get to room temperature. I sterilize my jars and lids in the dishwasher and let them dry. I then fill my jars up and pop in the O2 absorbers and quickly put on the canning lids. The O2 absorbers will seal the jars and also kill anything in the jar that survives on oxygen since the absorber absorbs the oxygen. So if there are any eggs that survived the freezing process, they will likely be killed at this point as long there is a good seal on the jar. Hope that helps.       I ended up using my small manual jar sealer. I am not sure how long they will be shelf safe since I waited for over 24 hours for the jars to seal

      Thank you for watching! Flour, most definitely. I dont drink coffee, but I did find information for you about it. What I found is that instant coffee can practically last forever unopened on the shelf. Another option that can last a very long time, is putting green, coffee beans that have not been roasted in mylar bags with o2 absorbers.       I know I've read many places not to do brown rice...but being the risk taker I am...I did anyways and have not had issues so far. Have had canned brown rice sitting on my shelf for several years now with no issues so far. 😉

      The oil in brown rice can go rancid, which is not an issue with white rice. How quickly it might go rancid? Tough to say as, it depends upon how you store them and your general environment? Like heat, humidity, light and temperature, including seasonal changes.

      If you have an automatic dishwasher you can use that (that is what I do on high heat setting). Or, you can do it old fashioned way by boiling water.     Can anyone tell me if iron from 02 absorbers go into the food that’s canned??? I have high iron in my body called hemochromatosis I cannot have more iron intake!!!

      @Lollipop Kid I have an answer for you finally! Sorry it took so long. I heard back from USA Emergency Supply that offers O2 absorbers. www.usaemergencysupply.com/. This is the response I got in answer to your question: "The absorbers are completely food grade and food safe when comes in contact with food; they will not leach iron into the food".     The oxygen absorber kills the bugs, no freezing needed, freezing and thawing can add moisture to your dried goods

      Thank you for watching! I let it get to room temperature first so it does not create condensation in the jar. Though, one time before I knew I was supposed to do that...I had put spelt in the jar without letting it get to room temperature and had no issues. But, now I know is best and safer to let it get to room temperature before putting in jar. 😉

    Thanks - good info, but I thought the point of oven canning was to kill bacteria, and also vacuum seal in one step? When canning flour/rice etc. the oven kills bacteria, removes moisture, and creates a vacuum all due to the heat. With your freeze method, you freeze the goods, but when you remove them from the freezer, don't they gather moisture during handling, much like when you put ice cubes and pop in a tall glass, it "sweats"? Then you pour the "sweaty" rice/flour/beans in a jar that has bacteria in it and drop an oxygen absorber in there? I'm not a physics major, but it seems like the oven method makes WAY more sense - prove me wrong...

There is certainly more than one way to "skin a cat". ;) Oxygen absorbers can kill anaerobic bacteria (those that cannot live without oxygen). They also vacuum seal the canning jar or mylar bag. I don't freeze all of my goods before I can; it is an extra step I take sometimes (as in if I have time or if I won't be able to dry can in a reasonable time frame) to kill any eggs or bugs that are found in food, naturally. Freezing is not necessary and may not be practical for most people or if you have an extremely large order of bulk. I currently have about 100lbs of spelt grain in my freezer because I haven't been able to get to it yet, plus there is a canning jar shortage at this time. If I let it sit in the bags they came in, they most certainly would have been bug infested by now. But, I may just end up using my mylar bags and absorbers instead. To address the issue of condensation after removing from freezer, you simply let the product sit for 12 - 24 hours to get to room temperature. I learned this very fast and easy method of dry canning from someone who works at the Home Storage Center of The Church of Jesus Christ of Latter Day Saints as I explained in the video. In the past, the Home Storage Centers would allow people to buy their dried goods in bulk (grains, beans, etc) and use their facility and canning equipment to dry can their food for long-term food storage - no heating of the #10 cans are ever involved (nor do they freeze the product before canning - but then, the products are being processed quickly and not sitting a long time to allow for infestations). Same with mylar bags - simply put product in the mylar bags, put in oxygen absorber and seal for 25+ years of storage. Mylar bags cannot be heated at all. Now, my ideal would be to buy the canning sealer, cans and lids and absorbers instead of using glass canning jars, but I don't have the budget for a $1600 # 10 canning sealer and they are out of stock just about every where I have looked. (It would be most ideal for me because those cans block out light that the glass jars do not) So the cheapest yet most effective route for me is using canning jars and mylar bags. Also - the Home Storage Centers of JC of LDS sell the very same dry canned food to the public and follow the health guidelines and the FDA inspects their plant regularly. There are also several companies that sell food packaged for long-term food storage the same way - # 10 cans and mylar bags, o2 absorbers and no heating needed or recommended. I trust they know what they are doing and feel comfortable and safe following their lead. I am blessed that that one Home Storage Worker shared this tip with me when she did. It has changed my life and I feel secure knowing I have food prepped for the long-term. This works best for my situation due to my hectic schedule.     This way maybe good for about 24 months. They will all let go and this is North canning in any way.! They are less expensive on Amazon.

      I am sorry to hear that. I am happy to try to troubleshoot with you. Here might be some things to check. *if the absorber is a defective one, it will be hardened and would need to be replaced with a new one. *it could also possibly be that the seal on the canning lid may be defective and might need to replace the lid. *may also be a sizing issue, i.e., the absorber not matching the size of the canning jar. If the jar is big, like a 1/2 gallon canning jar and a quart size absorber is being used, it likely won't seal. Hopefully some of those might help figure it out. Thank you for watching!😊

    But....the oven canning has the purpose of eliminating bugs, larvae, etc. by heating it? Just pouring into a jar is just changing the package...in my view. How can you be sure that this system kills those unwanted creatures?

      Hello and thank you for watching! :) This method does the same thing but with less time, energy and cost. This is the way almost all of the products purchased from the Home Storage Center are prepped for long-term. The only difference is they use metal cans instead of glass. I still have a lot of stuff I purchased from them in 2012 that are "dry canned" but started doing my own to save money after the lady who volunteers at the storehouse told me about how to do this. There are many effective ways to store food long-term. This is just my preference...with Mylar bags coming in 2nd. Another consideration is...you can't heat up Mylar bags as you can with glass jars...but it is the Oxygen Absorbers that are key in using the glass jars or the Mylar bags. I'v
      e had no issues with any spoilage or bugs in all of the years I've been doing this. ;)

    This is NOT canning. Just to be clear. It’s dry goods storage. Just because the jar is sealed does not mean it is CANNED. using a vac sealer or oxygen absorbers works, but please understand the food is not Sterile. The technique she shows is good practice for beans and grains, but please please people don’t be doing this sort of thing in the oven. Be safe and happy food storage!

Many people would go to their Canneries to have their dry food, dry canned. They were all called Canneries because the food was being put into cans (or dry canned). If you don't have the expensive metal can sealer (like this dry pack canner - preparednessadvice.com/dry-pack-canning-supplies/), or cans, you can also use jars. (which is also called "canning" instead of "jarring"). The jars can be sterilized before use either through water bath canning or through the sterilize cycle in the dishwasher (what I do). I do not use an oven because it does not make practical sense to me nor am I convinced of it's safety either. But, to each his own.
