Hi Katherine, I tried your recipe. My ham chim peng did not puff up like it is supposed to, but it tasted exactly like a ham chin peng. Do you have any tips? Can we bake this instead of deep frying it? What about air frying, have you tried this method?

Texture will be different without alkaline water because it allow the pastry to be chewy

Yaw Char Kwai is using high protein flour and the fermentation period would be different
