My Mum's Crowd Pleasing Okro/Okra Stew And Banku. Cook With Us!

- I'm totally grateful for my mum and enjoying her stay with us. I'm so blessed that she's not only helping around the house, but constantly suggesting videos she wants to make. This okra stew was so good, and I hope it is a hit for you when you try it.
Ingredients:
2lb okro
½ lb spinach
2.2 lb tomatoes
3 large onions
1 lb pompohuro (luffa or ridge gourd)
½ lb akwaabi
Approx 1 lb tuna
1.4 lb crab
1.4 lb Norwegian mackerel
45 gram ginger
1 cup palm oil
2 tablespoons shrimp powder
For meat:
1 teaspoon ginger
½ of a large onion, chopped
4 cloves garlic, minced
Salt

Very delicious
Here in the states, my Mom made a simpler version called Kalaloo Soup. Her main ingredients were corned beef, fish and blue crabs, okra, spinach and of course, hot pepper sauce, onions, garlic and other seasonings. This was served over fungi made from ground cornmeal. In her home in St. Croix, they used a larger variation of native greens (including Kalaloo bush leaves) unfamiliar to me and eggplant, but here in the states she just used spinach. When I got older and gained a liking for okra and pepper sauce, I found this soup quite unique and very delicious. Thanks for posting this recipe.

I SOOOOOO LOVE to see Mama in the kitchen. God bless and keep her! YUMMMMMYYYYYY! I am in the Bahamas and I just finished cutting up some okra to cook our version of okra soup. Then I saw this post in my feed and wondered HOW I missed watching this as a subscriber. Now I know why. God granted me the chance to add some of Mama’s flavorings and ingredients to my soup! I have a pen of live native land crabs in my back yard in a pen. Will grab a few and add them. Along with some fish etc. thanks so much for sharing Mama’s expertise!
I thoroughly enjoy your videos. Be sure to give the English equivalent of ingredients such as "Kako". Your audience includes people who are not familiar with all our ingredients. This will help them to replicate your recipes with similar ingredients. Blessings! 😊
Not every Ghanaian ingredient or utensil has an English equivalent. They can learn to pronounce the names and identify them in the grocery stores and markets the same way we can spot Miso paste or jalapeños. Learning from each other as we recognize our differences is what will unite us.

Luffa as soup thickener? The smell is awful! I recall it growing in our backyard. Sure is LUFFA? we let it dry and use to wash dished.

I think I got it from Sam's club. It doesn't come with a lid but I have many lids that fit it.
The crabs is not clean if doesn't open the back and clean the in side .

The food looks delicious but the slimmyness of okra always put me off. I know it's health benefits but how can I get rid of the slime?

The okra is slime ,how do u get rid of it without getting rid of the okra? Your question is not really making sense....just exclude it bt your dish will be half incomplete coz okra and its slime make 80% of that dish
Hi there, so I hope these few tips help:
1. instead of boiling the okra prior to adding it to the soup base, you could just chop it and add it to the base.
2. In addition to the above tip you could use less water and more fresh tomatoes, the acidity of the tomatoes cuts back the mucilage (slime).
3. I just remembered this last tip, before chopping the okra, cut off the tips and the "head" and then let them rest for 20 minutes in a solution of vinegar (I use distilled white or white) and water say 3 tablespoons vinegar to one liter of water. Kindly remember to wash the okra again with plain water before chopping.
