I always fry the onions, ginger, garlic with turmeric, cumin and red chilli first then add the dal and saute it for few minutes then adding salt and water I let pressure cook it for 2 whistle. After the pressure releases itself then adding little warm water to adjust the consistency i add fresh coriander and serve it. And I only use mustard oil for the dish, because in North East India and specially in Assam majority uses mustard oil for every dish. And we don't use hing that often in our every day dishes because we always like foods to be light and simple.

Actually he is not telling the whole recepie. Tomato takes the dal into another level. Plus add some dhaniya powder and garam masala after putting Onion. Then add tomato and let it seperate oil and then add daal . After this go for the second tadka. Garnish with dhaniya.
