This is a great recipe, but I have added a small green tomato and a small onion to the grated zucchini. I dry my grated veggies on paper towels before combining, and use Louisiana Fish Fry breading in lieu of the seasoned flour. Gives it a hushpuppy taste.
I am vegan and so I tried this using vegan shredded cheese and for eggs I used ground flax seed (1 egg= 1tbs flax and 3 tbs water). They came out so yummy and even healthier! :)
I am going to have to get out from under my rock and try other veggies other than peas, carrots and corn. Great idea.........Kids! We're having pancakes.

Ha! No shredded fingernails, and no shredded knuckles, either. Those fritters look great, and it's a new variation to me. I'll be giving them the taste test in the next day or so. YUM!
Found this recipe just recently and decided to make it. Not bad but definitely I would "tweak" it a bit. More veggies, 1 egg instead of 2 and grate some onion into it. I did it exactly as she shows it and I found my batter to be very runny. Maybe it's just me but you can get more out of this by the increase of another veggy grated and even add a bit more cheese, unless your diet doesn't think that's a good idea.
It was probably soggy because I noticed that she didn't use salt to drain the water out of the zucchini to keep them from being soggy. You use cheese cloth and salt--shake salt kosher on the zucchini and strain through the cheese cloth for about 10-15 minutes squeeze out, then combine with other ingredients. Hope this helps.
Lizzo, Cool recipe. If you chewed your fingernails, like I do, you would have less worries. I added chopped dried onions and garlic powder. Next time I may add some bacon bits and pimento! Good brunch item!! Carry on!!

How come you did not sweat the zuchini and how come mine came out so liquidity even after I sweated it and squeezed out all the the water I could, and the. Put I. Too much flour to compensate and forgot the cheese, wish you had takeout in Mexico!
Small advice: With their high water content (more than 95 percent) sprinkle on the shredded zucchini some salt, let it sit for 20-30 minutes , and drain it and dry it with a towel before adding the ingredients. They become much crispy.

You should make koussa (stuffed zucchini’s) and use the core that’s removed instead. You get 2 meals out of it!

What is 'baking mix'? Is it Baking Powder?
Is the mix you find next to the pancake mix, to make biscuits
