How to make Vegetarian Eggless Pistachio-Cranberry Biscotti Recipe | Whole Wheat Flour Biscotti

There is nothing better than dipping a fresh-baked biscotti in a steaming hot cup of latte. Yes, you can buy store-bought biscotti but homemade is so much fresher and tastier and you control the ingredients you want in your biscotti.
This recipe can easily be made vegan by substituting vegan butter.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
1/2 cup whole wheat flour
3/4 cup all-purpose flour
3/4 cup almond flour/meal
1 tspn baking powder
1/2 tspn salt
1/4 cup chopped roasted pistachios
1/4 cup chopped cranberries
2 oz unsalted butter (1/2 stick)
1/2 cup granualted sugar
Egg replacer or flax egg for 1 egg
2 tbsp Milk
Splash of vanilla
𝐌𝐞𝐭𝐡𝐨𝐝
Pre-heat oven to 350 F.
In a bowl mix flours, almond meal, salt and baking powder.
In a stand mixer or with a hand held mixer, cream butter and sugar for 2 minutes. Add the egg replacer, milk and vanilla extract and mix for 2 more minutes, scraping down the sides of the bowl as needed. Add the dry ingredients on low speed till the dough comes together. Add the mixings till well incorporated.
Make 2 rectangular logs of the dough on a cookie sheet and flatten the tops. Bake the logs for 30-32 minutes. Take it out of the oven and cool for 5 minutes before cutting it on the cutting board and making biscotti slices.
Put them back on the baking tray with cut side up and bake for 10-11 minutes. Remove from oven and turn the biscotti and bake for additional 10-11 minutes.
Cool the biscotti on a cookie rack and store in an airtight container. Enjoy with coffee!

The egg replacer brand that I use is Ener-G.
The total flour content in this recipe is 2 cups. You can use your preferred mix of flours. Note that if you use a higher quantity of whole wheat flour, you may have to add additional liquid than the recipe specifies.
You can substitute milk with milk alternatives or orange juice.
You can use the mixings of your choice, keeping the total to 1 cup or it gets difficult to cut.
