1.25 cups lightly toasted nuts; coarsely chop 1 cup and set aside, then finely grind the remaining quarter cup 1.25 cups all-purpose unbleached flour 1/2 cup unsweetened cocoa powder 2 tsp baking powder 1 tsp instant espresso powder 1/4 tsp table salt Thoroughly combine the dry ingredients Whisk two eggs until light colored and foamy Add: 1 cup sugar 4 Tbsp unsalted melted butter 1/2 tsp vanilla Combine liquid ingredients Add half the dry mixture to the egg mixture and fold in, then add the remaining dry ingredients and the coarsely chopped nuts and combine. Shape dough into two rectangles, 8" x 3", on parchment paper. Wash with an egg wash made with one egg white, and a pinch of salt Bake at 325º for 30 minutes, or until puffy and with a crackled top. Cool 30 minutes, then slice each rectangle into 1/2" thick slices. Place slices on a wire rack and bake at 325º for another 30 minutes. Cool for at least an hour.
Great recipe. In order to reduce the second bake time in half to 15 minutes, I place the cut slices directly on the wire rack without a baking pan underneath. Both sides are exposed directly to the oven heat so they dry out quicker. During this baking time, I prep the next batch of raw ingredients. And the baking pan cools enough to put the next set of dough on it. With the parchment paper, you can prep the next loaves on the counter before the pan has cooled from the prior batch. It's great to make these in advance before holidays and store in tins allowing the flavors to become more pronounced.
I recently purchased the Test Kitchen's recommended Dutch-processed cocoa powder "Droste" from Amazon and I've been looking for a way to try it, so I'm literally headed to my kitchen now! I am trying to improve my eating habits though and while this appears to be a rather healthy recipe already, I think I'll make it with my favorite monk fruit & allulose blend sweetener instead of white sugar to cut the calories. I'll also substitute 1/2 of the white flour with "white whole wheat" flour to lower the glycemic index a bit. That should make these little gems both nutritious and guilt free! Thanks for sharing Miss Julia and ATK!
I have made these atleast four times now and have given them to people as little gifts…each person thought they were beyond delicious!!! One person has requested them to be delivered weekly!😂
I made them. I wish she gave weights for flour, sugar. I used measuring cups as she directed. I think mine are good ones, but still not as good as weighing. My dough was a little more wet than hers, mine spread out a little more when baked. But very tasty!
I also prefer to cook by weight. The loaves splooted out into one flat thing, not sure if it was because of poor measuring by volume or a flaw in the recipe. Next time I’ll do a lot less sugar, more flour, and a bit more salt would help it.
Bash/crush the nuts (in a bag) with a rolling pin (or sub 20% of the nuts with ground nuts). Use a whisk to combine the dry ingredients. Use a whisk to combine the wet ingredients. Continue on.
CORNER: (noun) "a place or angle where two or more sides or edges meet" (example) The vertical & horizontal surfaces of the food processor bowl meet in a corner.
Try replacing the flour with an alt like oat/almond/coconut and use your sugar sub of choice. I don't think they'll be very biscotti-like in texture but you'll have a keto cookie that'll prob taste decent.
These biscotti came out way too spread out and sweet. Would prefer measurements by weight rather than volume for consistency, and usually ATK does specify weight so not sure why they didn’t this time. Other recipes use about ¾ c sugar instead of 2 1/4 which might be more to my liking.

It’s so unfortunate to see someone repeat such a terrible lie. Adding a little bit of coffee does not make it taste more chocolate. It just makes it taste like coffee. 😢
No it doesn’t. Even when you make pumpernickel bread it calls for a small amount of instant coffee. I’ve made both chocolate biscotti and pumpernickel bread for years and have never tasted coffee.😊

That tip of using the processor to whip the eggs was genius and I could have used it about 40 years ago.
you're a great teacher, easy to understand. thanks!
Julia as always thank you! Lovely recipe. Can’t wait to try it! Can you do a biscotti marathon?! ❤
Perfect timing with fall & winter ahead!
Love any ATK recipe. I have just about every cookbook and use them often.❤

Thank you so much, Julia!
I’m looking forward to making this recipe
I used finally chopped mixed nuts, a few craisins and dried pineapple. Basically, your favorite trail mix makes 😘 biscotti
Very tempted to try this recipe. Thanks for the helpful hints. Love being able to do in the food processor.
I didn’t know there was such a thing as an imperfect afternoon cookie😄. The biscotti looks delicious.
And may I say Julie your hair looks super cute!
I want to try this one. Looks lovely.
The recipe worked like a charm. Yay.

Thanks Julia.
Biscotti are my favorite things to bake. I'm going to make these.
Looks scrumptious! 💜
❤❤❤❤❤😊thank you so much
Me: Cool, biscotti should be pretty simple; pretty straightforward.
Julia: So, I've made some templates....
😂❤😂
🤣
I'm sold Julia. I'll back the truck up for choco-biscottos. Meanwhile, ever considered an ATK video for making sun-dried tomatoes?
Yummy!

you prefer the dark cocoa because you're a good person.
Grow up. It's a cookie recipe. That is all, OCD.
Can we get versions without kitchen appliances? I don't have a food processor/blender/stand mixer.

I promise you; buy the food processor. It is amazing. Small footprint, big impact.
Nice!
I gain confidence in watching you but I desperately miss the lighthearted banter between you and Bridget while moving through a recipe.
I would like to have my mind blown

🔥🔥🔥🔥🔥🔥🔥
Chocolate............🤤🤤🤤
🎉🎉
Can you use coffee flavour liquid, please, as sub for the expresso powder?
This looks like a low- moisture recipe to me. I think the liquor might alter the texture, making the dough too wet. Im not sure though, just my guess
What if we don't bake it a 2nd time? Those are soft, I assume, but is it a doughy taste or is the taste still good?
Will this work with gluten free flour?
Hey, Julia! I've NEVER seen any 'corners' in my food processor! 😅

Glad to see no seed oil in this recipe but avoid that veg oil spray (use Chosen avocado spray).
I don’t know why they are so keen to it in ATK.
why we shouldn't?
Avocado is a vegetable.
❤❤❤❤❤❤
Does any1 kno where 2 get get the wooden salt container.
whisk the egg white separately and skip the baking powder

How does one toast nuts?
10 minutes on a cookie sheet in a 350-degree oven. Easy!
Depending on the amount and/or how your kitchen is equipped - in the oven/toaster oven, in a dry pan on the stove, in the microwave.
Those look fantastic. So glad you used almonds. Never understood the appeal of hazelnuts at all.

Getting the recipe is a pain in the arse. Horrible service.

"biscotti - old italian word meaning sweetened cardboard" 🙃 ... I know many people love it, but not me
