I put pesto in my mashed potatoes and it's amazing. Been making them like that for years. Perfect for making scotch style potato pancakes with green onion the next day too!
I fix the pesto eggs at least once a week, I've gotten so addicted to them. They really only need a few spoons of sauce, and they cook better if you heat the pesto in the pan a bit before adding the eggs. Also popping a lid on for a bit helps to cook it a bit faster without burning/dehydrating the pesto.

I have poached eggs in pasta sauce. Ahead of time make garlic bread. Get a jar of pasta sauce to a simmer. break in two eggs. Once the eggs are cooked, fish out with a slotted spoon and serve over a slice of garlic bread. Super easy and delicious.

I used to do baked bread roll-ups. the filling was a mixture of cream cheese, bacon, green onion, sometimes I would put in sun-dried tomatoes, after spreading the mixture on the flattened bread, 2 asparagus stalks, cut to the size of bread, would be placed in the middle. roll them up, brushed with butter, and sprinkled with Parm cheese. then bake.
Emmy tried that cookie dough bread and she has been very brave trying different foods it’s the one recipe she couldn’t stand at all and even said it was awful which she rarely does.

FOLD in the PB and chocolate chips (and a splash of vanilla, sure) then spoon into the lined tin and bake." It may not be keto, but I think it will be edible!

Barry, I'm late to this one but I've had a variation of those pesto eggs for decades now that I think work better, and have lest pesto waste. 1) Separate your eggs and do each egg in a separate bowl 2) Whisk a couple teaspoons, up to a tablespoon of pesto (I prefer fresh made) into the whites. 3) Get your pan ready to make over easy eggs (oil the pan and whatnot) 4) Once hot and ready, pour in the whites one at a time so they can set up for a second and stay separate from each other. 5) Add in the yolk while the white is still very liquidy on top (this should be a fairly fast proceedure). 6) Cook to your desired doneness, or even flip if you want for over easy instead of sunny side up. Serve however you like your eggs! Sauce, toast, bacon, whatever! You get that runny yolk, the pesto flavor throughout, and you don't use a jar or two of the stuff!
There was a bagel place in Seattle Washington USA that made them this way. Their other eggs that I liked was scrambled eggs with room temp cream cheese whipped in, before going into the pan

I once made a keto "brownie" recipe that was more or less the same as that bread. It tasted like someone covered a kitchen sponge in coco powder. It still haunts me.
Fyi, it's Loco Moco. It's a deceptively simple dish, but it's really all about the gravy. Good, proper, homemade gravy is what makes the difference between an ok loco moco and an excellent one.
So the cookie dough bread needs a couple things... first of all, it needs sugar. The sugar is not just flavor, it's chemically necessary to help it keep a foam. Second, less peanut butter! The oils in the peanut butter will not do well in that quantity. Third, use some vanilla to tie it all together, along with using semisweet chocolate (the heavy tannins in dark chocolate will make it bitter and flat tasting!).

Also, another fun discovery we've made recently is where you take a nice, big pan, pour beaten eggs into it, let it cook partway through, and then press a great-big tortilla wrap down into it. Let it cook through a good way more, then flip it and put cheese and some strips of bacon onto it before rolling it up carefully in the pan. We've been using it as a way of doing a quick, easy breakfast for everyone in the house in one go since we've discovered it XD
Might try the keto cookie dough but have a play with the recipe. Two weeks into keto and apart from some dark choc ive had nothing sweet. Found lots of recipes for cakes etc but it will cost me £5 just for the almond flour - wanted to find a keto dessert that doesn't break the bank 😂

It would probably be much better making fresh pesto, and not cooking the eggs in it. Fresh pesto should just be warmed a bit, otherwise you lose the volatile compounds in the basil that make that fresh basil flavor so amazing. For example, if you're making pesto pasta, adding the warm pasta to a pan of room temperature pesto should be enough to warm the pesto through. So if I was to try it (which I probably will!), I'd cook the eggs separate and add some warmed through fresh pesto.
Oh no, that was way to much pesto..... I think you just need as much as you would have used of oil. So much left in the pan. I do love your videos and that you genuinely give everything an honest go! 😁
Some of the cooking hacks are not easy at all. Might as well just do it the old fashion way. My own life hack is you break some biscuits and add a 3 in 1 drink powder with water or milk. Heat it up and you get an oat meal of sort. Taste good but the bread will be oily from the butter.
I want you to try that bread vegan bacon. Also check out saucestache here on YT. He has some wild vegan food that would just be fun to see a non vegan try.

Yes, I thought the pesto should be heated before adding the eggs and, as you said, covering the pan will help the eggs cook faster.
Yes, the steam coming off the pan was very visible, and could have contributed to cooking the tops of the eggs.

I love the pesto eggs, when we make them we heat the pan with the pesto first before dropping the eggs in. Gets the sides set a little better!

Yeah I've just spread pesto on bread & added a fried egg. Delicious & much less mess to clean off a pan later.
For the egg thing putting a lid on the pan would steam them and make it slightly quicker
