    Coffee creamer with poly hydrogenated sunflower oil is killing us. And I recently found out about casein which is in so many things that I cook with at nearly every meal like dry soup mixes, canned soups and so many other things. At 53 I recently began feeling the affects of all of these things that you speak of. Thank you so much for the education. Keep spreading the knowledge.

      We must eliminate processed foods. Use cream in coffee. Or just milk. When I have time, I take the drive to the Amish farm for raw milk!

    I stumbled across your lecture this morning as I was cooking. WOW, what a gem, I am learning so much. I am 77 yrs. old and pre-diabetic. I have a great doctor who has made me aware of so many of the symptoms, discussed. So I now have even more information to keep me on track for a more healthy lifestyle! THANK YOU SIR!!!

      Yvonne, if you’re pre-diabetic, the best diet is carnivore. I dropped my morning fasting glucose levels about 20 points within one week of strict meat, mostly beef, or lamb, bison. No pork or chicken (because of their diet), though many carnivores do eat both plus dairy. For myself, No caffeine, no dairy, no vegetables, no grains, no potatoes. Currently no egg whites, but the yolk I do ok with.
      Yes to butter and beef tallow.
      This diet also got rid of swelling around my ankles & edema in my feet.
      Also in process of evaluating adrenals.
      Sugar is a strong addiction for most people.
      Currently Redmond’s Real Salt is my only seasoning.

      Look at Dr Jason Fung's channel for some info about anti-diabetes (type 2) diets that aren't quite as restrictive as the "I have a hammer, everything looks like a nail" carnivore crowd would have you believe to be necessary.

    I had a hip replacement done last year. Since my stomach was tore up with anti inflammatory meds, I decided to cut out inflammatory foods. The worst are sugar, meat, trans fats and dairy. I’m a WFPB eater. It’s not for everyone. We all need to find what diet works for us. I began implementing anti inflammatory foods such as cherries and berries. The relief was immediate. My arthritis has abated. We’re supposed to be using diet to stave off food related illnesses like cardiovascular disease and diabetes. Hippocrates, the father of medicine said, ‘let food be thy medicine and medicine be thy food’.
    Stop relying on Big Pharma and surgical intervention for management of symptoms. Ones brought on by crappy eating. An ounce of prevention is worth a pound of cure.

      We are what we eat, if we find the correct things to eat as an individual.
      A century has past the previous and we have already modified fruits with high fructose and processed foods.
      So, refine sugars are not beneficial, and so refined herbs I would imagine are not either (pharm meds)

      If we keep eating what is being generated as health in our local supermarkets yes we will become what we eat.
      Fat, obesity, cvd, ald, pd, db ...
      Autoimmune diseases.
      But like me external issues that was in the water exasperated thyroid disease in me .

      You make an important point, that different people respond to different versions of carbohydrate elimination and/or reduction. We all benefit from real food free of manipulation by the food industrial complex, and by commercial factory farm ag whether that is meat, grain, or vegetables.

    If fruit is bad for us, who is it intended for? I love apples, pears, tangerines, and melons, particularly watermelon, berries, cherries, and bananas, to name some! I don't know what I'm going to eat! 😢

      Me too. I love blueberries, watermelon, pomegranate, oranges and pears and eat them fresh daily. I'm 53 and have the body of a professional athlete. I do have some inflammation but i don't think it's from my fruit consumption. This post didn't help me at all. Too much conflicting information with other sources. Just confabulated everything I thought I knew.

      Just eat in moderation. I read some studies along the years that too much fructose can activate the. APOE genes responsible for Alzheimer's. True story...my mother in law has been all her life addicted to variety of fruits and would eat them unconditionally. She has APOE genes only x 1 variant and surely she has Alzheimer's now.

      You described my diet as well when it comes to loving fruit. The confusing part is I have a podcast where Dr Lustig (who is mentioned here for his contribution to our understanding of fructose) suggests eat all the fruit you want. His point is natural fruit comes with fiber which reduces the rate at which it is absorbed. But definitely avoid fruit juices which lack the commensurate fiber (pretty sure I've got the 'sugar doctor' correct in the above).

    As a physician and nutritionist, I am so sick and tired of people like this not making the distinction between the fructose in high fructose corn syrup, which is a toxic substance made in a laboratory, and put into commercial foods; and whole fruit! There is a world of difference, including that fruit has fiber to modulate the rate of sugar absorption, essential macro and micro phytonutrients, antioxidants, and high pure water content, which makes it about the healthiest food for the human diet!

      HFCS is made from corn in a food processing plant (HFCS55). If you watched the full video @ 57.20 he is asked the question about fructose in fruit and says to avoid fruit juice because it has no fibre and the fibre in fruit delays sugar absorption into the blood stream and reduces the glycaemic index, he recommends at least 2 servings of fruit a day to get nutrients, polyphenols and bioflavonoids. Make your own video if you think there is a niche and others are lacking. 🙏

    I’m carnivore, and much better for it. I reduced inflammation, and high morning glucose levels by ELIMINATING ALL VEGETABLES, AND FRUITS as well as grains. I previously ate lots of vegetables, salads, beans and steadily gained weight and pain and swelling in my ankles, even though I had eliminated gluten, and sugar.
    But with beef, lamb, and bison my inflammation has steadily decreased as has my glucose levels.I also eat HEALTHY FATS LIKE BUTTER AND BEEF TALLOW.

    Before bashing wheat…. You need to investigate bread as bread was intended to be…. Made from whole wheat berries ground and made fresh. White bleached flour is like poison. I was sick for years after losing my gall bladder. But then I started making bread from whole wheat berries and only eat one slice per day. I have perfect bowels now. Perfect!!! All my loose problems are gone! The issue is… eating too much and using the wrong type of flour. I no longer eat anything with white flour nor any processed foods.

      @@johnrice1943 tell that to my bowels. After losing my gall bladder I had horrible loose stools for years! Basically when I ate, I had to go. Was terrible!! Docs could not fix. Then … I heard, thanks to Grains and Grit, about real bread made without store bought flour. I bought a mill and ground my own wheat berries, made some bread and within one week of eating a slice of bread per day my issue was fixed. I feel normal now. I am omnivore! Have to be. When you do not have a gall bladder the bile constantly dumps into system from your liver and is not stored. Fats accelerate this dumping.

    would have been useful to have a slide that has the recommended ratio, only flaxeed seeds was on the slide , what are the ratio for coconut oil and olive oil ? Would be better to have a list that meet 3-1 and 1-1 for layman ?

      At PCC groceries in NW wash state/Seattle metro we can buy organic fermented: carrots, wh & red cabbage, kimchi (cabbage?)… etc.
      In refrigerated aisle, made locally…

      Fermentable vegetables are regular vegetables that have good fiber content that the body ferments on its way through the digestive track to release nutrients. They are different than ‘fermented’ foods like sauerkraut etc. Hence, eat lots of vegetables :)

      fructose like the fructose in fruit? Juice in general is highly processed with highly processed sugars unless it is freshly made at home? Why not eat the fruits whole they contain important fiber, vitamins, and antioxidants

      Fructose glycates, which means that it sugarcoats your proteins. Have you ever ordered crème brûlée at a restaurant and watched as a blowtorch burns that crisp coating on the top? That coating is like the coating fructose creates on your proteins as it travels through your bloodstream.
      Glycation is a magnet for free radicals, which come in and chip off pieces of your DNA and cause the following:
      Additional damage and accelerated aging
      Cross-linking of proteins, which causes wrinkles, aging, and other skin issues
      Cell adhesion, which increases the risk of cardiovascular conditions, stroke, etc.

    Also for inflammatory markers the N/L ratio or Neutrophil (polys) to Lympocyte ratio. Preferred no higher than 1.86. Read up on it. This 1.86 may have changed, sometimes slightly different in men vs women.
    Divide Neutrophil # by Lymphocyte #.

    Very well presented and explained. What does 25gms of fibre look like? I take it that your target audience is American and the way food is produced and eaten in that country? What are your thoughts on cod liver oil as a supplement?

      For example: A 2.5-ounce serving of California avocado - or roughly half an average-size fruit, according to the U.S. Department of Agriculture - has about 115 calories and 4.6 grams of fiber. So it looks like about two and a half Cali avocados. One cup of broccoli has about 2.2 grams of fiber - so we're talking 11 cups for 25 grams of fiber - that's kind of surprising to me - I eat a lot broccoli, but not ten cups a day. A cup of chickpeas has almost 10 grams of fiber, so we're only looking at two and a half cups to get 25 fiber grams. Bottom line, different strokes for different veggies. Just for reference, also, a cup of romaine lettuce has about a gram of fiber (not so much) so that's easy to calc in terms of establishing, say, a base of fiber from romaine - maybe ten cups = 10 fiber grams (huge salad) then adding your avocado, chickpeas, etc., to get you to 25 total. Get a big bowl.

      WHAT are the best/safest add-ons (? psyllium?, acacia? flax hulls? , etc, to supply an easy 15 g/day for us health conscious people to add up to 25/day when added to our healthy diets?)
      Would love knowledge. And also breakdown of soluble/insoluble fibers - which is it? Both? etc

    Getting massage and stretching. The more unnecessary contractions you have ..this creates inflammation also the inability to move due to these contractions affects all the organs. Needing a chiropractor adjustment to free up spine nerves that controls your organs, everything in you.. your breath which controls the blood flow can be suffering from impingement. I always suggest you get your spine checked first . If it's out you will not get a true understanding. In a electric issue in a house if the bulb goes out.did it blow or did the breaker blow. Chiropractor works with the fuses if your body. If you have a problem in your system and you don't check the spine first you will be playing a guessing game...

      that is complete malarkey. Your gut microbiome is messed up from animals and animal by products. Vegetables do not cause inflammation, obesity, or cancers? there is tons of science about meat and eggs effect on the human anatomy over time. There is a reason the longest living, healthiest communities to ever inhabit the earth are predominately vegan/vegetarian.

      Lol....
      Good for you. You aren't allergic, or sensitive to the eggs, or you eat totally organic eggs? and milk.
      But, I'm the opposite my whole life I had such problems and thought why am I getting congested after I drink a beer and or eating pizza I ate this everyday of my life, than I started with asthma attacks....
      I was told I'm allergic to everything from tomatoes to cockroaches.....so gross...
      So now after BC, type 2 COPD and at 60, I finally found out through podcasts that I'm not crazy.
      If I eat sugar like baked goods I get so wiped and nasal congestion and nasal polyp. Eggs I'm going like mad...
      But raw vegetables my stomach goes nuts but when I steam them I'm fine and it's only the broccoli the cauliflower kale spinach that I eat and I'm really trying to incorporate now but always Steamed or cooked slightly .
      But, that's why clinicians need to not base their knowledge, but individualize each patient.
      I can't go to anymore oncologist and endocrinologist anymore here in the Coachella Valley bcz they are truly ignorant and deliberately not doing their do diligence to their patients.
      Some intentionally incompetent do to their contracts and kick backs.
      This is not acceptable to me anymore.
      Good luck I'm hoping I can stick to this guideline so I can get rid of my constant inflammation that has caused hashimoto's or hashimoto's causes my inflammation thyroiditis coitus Graves disease breast cancer asthma, loss of my total smell sense, in the 90's than loss of vision than all vision in rt eye. Hearing started as a child.
      I am scared now of AD or PD more than any others.

    I have a suspected psoriatic arthritis and the symptoms just appeared last this june. In just 3 months, i was completely bedridden. But now i can walk but limping because my knee and left foot are so painful. Both of my hands are affected too and i can't make a fist because it's swollen. All that because i eat a lot of meats since i was young

      @@Jonases_20 very sure. PsA is an auto immune disorder. Genetically linked. It is not caused by dietary choices. You will have it present regardless of what you eat or do not eat. You cannot eat yourself in or out of this condition! If you could it would not exist. It is just NOT that simplistic. Go to your doctor and get prescribed the appropriate biologic medication. THAT will treat it. Not being a vegetarian or carnivore.

      My PsA was set off 6 yrs ago by several days of Extreme Stress! (at a time of year full of “holiday” parties: cakes, candies, eggnog, rum, cheese plates, chocolate santas - SO inflammatory! Not much healthy kale, garlic, salads and salmon btwn Turkey Day and New Year’s…
      So, yes, no closed fists/easy buttoning up until I realiized Diet and stress levels are critical…

    I still can't accept that he says "it gets much worse when you get into dried fruit" I love my dried fruits and nuts, especially for snacks. I do totally agree though about fruit juices. Pure fructose going down the pipes. They keep giving it to my 4yo nephew and I don't know what will stop them from doing so.

      ​@@paulsansonetti7410I used to make a trail mix that included a variety of nuts, seeds, yogurt raisins and many dried fruit like; banana, apricot, pineapple, mango, cranberry and a few others I can't remember. I ate it often and thought it was good for me. It nearly killed me at 48. When I found out that the food I thought was healthy for me was actually killing me I was flabbergasted and had to educate myself. Educating myself was extremely confusing at first 10 years ago because there was so much false and/or conflicting information on the Internet and RUclips that I really feared everything I was eating for a while and became malnutritioned because I was trepidatious of everything I was eating. Still trying to figure it all out. Your comment hit home because I was that person 10 years ago. Didn't have a clue.

      Try and avoid PUFAs as much as possible
      Avoid fructose like the plague
      Consider carnivore
      Consider keto ,Dr Christopher Palmer cures almost all mental illness with Keto diets,he has excellent podcasts with Tim Ferriss and Dr Andrew Huberman among others and an excellent book " Brain Energy "
      For people that insist on carbs I'd say look up the Ray Peat diet ,The croissant diet by Brad Marshall, And Perfect health diet
      Sugar isn't the end of the world ,but fructose definitely is, it must be processed by the liver and is approximately 9x as glycating as sugar
      Similarly cell membranes made from PUFAs peroxize /caramelize approximately 9x as easy as cell membranes made from saturated fat

In 2021 I hiked Machu Picchu and spent weeks in the Andes hiking and living with the Incas.. Those who struggled with the hike were not only younger but also from the west.     1/4 cup of dry organic steel cut oatmeal has 27grams of total carbs, BUT only 4grams of fiber:
    2grams of soluble fiber and 2 grams insoluble fiber.
    Would think it would be more fiber.

    Good info. But, I want to add from my own experience that a raw vegan, very low-fat diet, with plenty of fruit is an antiinflammatory diet. Sure, not everyone can go raw vegan, but if you lower the fat to not more than 10 g / day and don't eat grains at all, then fruit is perfectly fine in large quantities. I can eat 5 bananas once and I don't have any issues with the inflammation.

      It might be an antiinflamatory diet for you, but when I was raw I had tons inflammation and was full of cystic acne. I went high fat carnivore 2 years ago. My skin looks so good and my guts are finally healing.

      @breannajoy Were you a very low-fat raw vegan? Because the amount of fat makes the difference. I know that from my experience. Also, you don't have to be raw vegan, but if you go very low-fat vegan then you can see great results. Also, if you go very high fat and very low carb, you get good results, too. So, the 2 extremes are working well. Never be in the middle, both high-fat and high-carb. Since I don't tolerate fat so well, I chose the low-fat diet. A friend of mine has your diet and she is doing very well, too. I am not surprised. Good Luck!

      Veganism is better than S.A.D . But long term it creates incredible nutrient deficiencies and you run out of protein, because you can't recycle proteins in perpetuity
      Good fats are anti inflammatory AF,plus our brain is approximately 70% fat
      We need lots of high stearic acid saturated fats

      Canola oil comes from rapeseed, a genetically modified seed. It was used for paint before then was genetically modified for human consumption and was marketed even before being tried and tested for at least three generations.

    30:45 olive oil is only better than PUFAs not ideal , you want tallow,grass fed butter, coconut oil,ghee
    Oluve oil and bacon have approximately the same ratio of PUFAs,Mono ,and saturated fats
    Neither are good for us ,or anything close to ideal
