    West African food is so delicious, intricate and complicated. I'm from another part of Africa and our cuisine is MUCH simpler. Unfortunately I am an addict of all food West African, from Senegal to Cameroon, so I try my best to copy these dishes. The process is so wonderful and new to me. Like adding peanut butter to a stew - incredible! There's so much to learn and your food is soooo nutritious. Thanks for sharing your recipes dear.

      Yes I love our foods. Born to west Afrikan parents we learnt the basics and some. But the cooking of moin moin in leaves I've never done and some other specialist foods. I learnt most from my mother but also when visiting Nigeria my grandma and grandaunt were amazing for more traditional approaches like using ogiri with vegetables. Maybe our wonderful host will include some additional traditional tips. Really love this vlog. Thanks again💗💗

    Nwa nne m, thank you and God bless you for this video. I prefer the leaf to using plastics because it's healthier but the last time i tried it was a mess. So I use ceramic bowls to bake my moi moi instead which is another healthy option.
    Thanks for this tutorial. It may sound funny because i'm currently single,but I'm so happy and can't wait for my unborn children to eat my moi moi(both ceramic bowl and leaf 😊😊). Chukwu gozie gi👏

      For now, you can line your ceramic bowl with the leaves so you do not miss out on that unique flavour from the leaves. ;)

    From Nigeria dear :) I heard that Asian shops sell banana leaves. Not as good as these ones but still gives the Moi Moi a leafy aroma.

    I store Nigerian Moi Moi in my freezer for up to 1 month and the taste remains the same. When you want to eat it, bring it out to defrost at room temperature then warm it in a pot (add some water). And it will be as good as new.

    Thanks for this. Here in the States, people use aluminium foil, disposable coffee cups, plastic baggies and all sorts of things that surely leach many harmful chemicals into the food. I'm thinking of growing a banana plant in my house just so that I can use the leaves for moi moi.

      Though I'm not in the abroad😁 but at my family compound at times whenever my aunt's around she uses Banana leaves I wonder how she does that and it pains me a lot I didn't learn that from her the way she used to do it, though at her own place she uses foil whenever I visit her

    The whole process ... I will not lie to you neither will I try to discourage you but it does take a long time. I usually set out a Saturday to prepare these in large quantities and store in my freezer. But if you are cooking a small quantity: Let's see .. soak the beans for about 30mins, remove the coat for about 30mins, soak the beans for 3 hrs (this is the same for any quantity) Blending, mixing and cooking - 2hrs. If using foil bags, I usually make those on a different day. But it's worth it!

      The easiest way to take off the back is to soak in water for 5 mins and drain the water and pound in a mortar. Trust me within 20 mins you are done washing

    OK cut the big banana leaf and pass it over a blue flame such that the flame wilts the leaves making them softer. Your cooker flame can do the job well. Please note that the flame should not touch the leaves, rather the heat from the flame. Make sure that the entire leaf has wilted then tear it up into square sizes and discard the big stalk.
    After that, wash the leaves very well like I did in this video. Use 2 of the square leaves just like I did in the video, fold into a cone and so on.

    In which state is the banana leaf? Will you be cutting it from the tree yourself or is it the one that has been cut and torn to small square sizes?

    The leaves are known as Uma in Igbo and Ewe eran in Yoruba. These ones were brought for me from Nigeria. They are sold in all food markets in Naija.

    I normally buy my fresh banana leaves from Asian/Indian green grocers, they sell them and they are quite cheap,as they use them quite a lot too!

    You are so lucky to be able to grow your own banana plant in your backyard. Pls send me some when they are mature! :) These leaves were brought to me from Nigeria just so that I could make this video as I have been receiving a lot of requests about it. I normally use aluminium foil bags. (*_*)

    Thanks for this video!! I love moi Moi!! Especially when it is cooked in the leaves. You are right the leaves add a flavor to the Moi Moi. I tasted for the first time that way when I visited Nigeria for the first time. What kind of leaves did you use? Where can I buy the leaves?

    They are not the same at all. Banana leaves are much bigger than these ones. They are so big that you need to tear them up to get them into small sizes that you can easily fold. Mature banana leaves are about 2 metres long but as seen in the video, Uma leaves are quite small in comparison. Google Thaumatococcus Daniellii for more info on Uma leaves.

    Please how how long should I cook the moimoi using the leaves. The finishing is always a disaster. And what can add to make the moimoi stick together instead of scattering whwn eating

      For the quantity of Moi Moi that I cooked in this video, after 1 hour, at most one hour 15 minutes, the Moi Moi should be done because leaves are used.
      If you start eating the Moi Moi immediately while it is still very hot, it will seem watery but if you leave it to cool down to a comfortable temperature, it will solidify. If yours did not solidify even after leaving it to cool down then that means that you added too much water when mixing the Moi Moi.

      Did you cook it long enough? If yes the only other thing I can think of is that you added too much water when mixing it.

      tolu adepegba these are uma leaves. They were brought to me from Nigeria. I heard that banana leaves are sold in Asian shops in the US.
