    Do you remove the parchment circle when you put the pan back on top to trap the moisture?

    What if you don’t have a cooling rack?

      Set it on a gas stove or stack a couple of equally-sized coffee cups and set the pan on that so air can get underneath it. In the old days they’d just set the cake in the window :)
