Once you remove your cakes from the oven, it is important to follow proper cooling techniques to ensure your cakes maintain their moisture and desired texture. Without this important step, your cakes can turn gummy, soggy, or even crack and dry out. In this free lesson, cake designer Rachael Teufel shares her tips and tricks for keeping cakes moist and delicious. With only a cooling rack, Rachael works with nature to encourage the natural cooling process. Don’t miss her secret tip on how she traps the moisture in the cake as it naturally rises and escapes, as well as how to gently remove them from the pan if they stick along the edges. What if you don’t have a cooling rack?
Set it on a gas stove or stack a couple of equally-sized coffee cups and set the pan on that so air can get underneath it. In the old days they’d just set the cake in the window :)
