The texture hasn't changed so, if you're still squirmish, you probably won't like oysters no matter how they're prepared. What did you mean by keep them from moving? As in they move on their own because they're still alive? Or because the shell isn't flat it will roll some? I want to try cooking oysters but them possibly being alive when I do it is slightly intimidating.

They're just so mossy, sometimes, you have to clean them. But, not to worry, you're going to love this recipe.
That would be Great with a Cold One and Pickled Eel Feets for Desert. Definitely gonna try it with some Southern Maryland Oysters.
