Only thing I would change (up to you) is swap out the cabbage for a potato. The starch will help thicken the curry even when the base is watered down. Also the red bell pepper for a green as the onions will make the curry sweet and you don't wan't extra sweetness from a red bell..plus they cost more ha ha. Either way enjoy the curry's you make.
Thanks! :) I'd say 2-3 days but have honestly not tried for more than a few hours (overnight at most). I normally use them immediately or store them in the freezer and they rarely stay there for more than 2 weeks until I used them all :)
