I like to add big pieces of cauliflower to this, and although not traditional, I also add a can of roma tomatoes to thin out the heat a little bit, and a few potato chunks. I wanted something authentic besides using the jarred paste and this is it. also, is it traditional or ever done to add a bit of vinegar right at the end before serving? seems like I saw that somewhere. to brighten it up?
@@fredgarv79 you can definitely add potatoes. Potatoes taste delicious in any type of curry. Adding vinegar at the end is a matter of choice and individual preference. @@CurriesWithBumbi I read other recipes but I really like your method of browning the onions first, then adding the paste back into the onions and browning it all a bit. caramelizing it. then later add your water etc. (another recipe I saw used raw red onions and marinated them with the chicken. no browning. I think yours is much better) I added chicken stock and some tomato sauce then slow cook it. Do Indian recipes use zucchini at all? I was going to add some zucchini but forgot to do it. seems like that might absorb the sauce nicely. I like to make my own keema samosas with lamb carrots and peas, massala etc and I always used store bought spring roll wrappers or samosas wrappers and it just did not seem like the original crispy ones I had had in restaurants that were so amazingly good. So I saw that you should make your own dough recipe just using regular flour and wow much much better than the store bought wrappers. it was a lot of work to make the dough, then stuff each individual one with all the ingredients, but with the tamarind chutney and cilantro chutney sauces, they are so good. I also make saag paneer and take it over to my relatives who have no idea what it is, and they love it.

Usually I have issue that with many recipes, you need to add more of everything to have really spicy and tasteful result, but with your recipe, followed exactly step by step and it is insanely good. Prepped this yesterday so I could marinate the chicken thighs overnight. Just finished cooking this and it is delicious, I'll probably add more spice when I make it again but I really appreciate that you didn't make it super spicy. I'm looking forward to having the leftovers tomorrow, I have no doubt that like you said it will be better the next day! This is an excellent recipe! I've done it many times. First time I followed it to the letter, later I improvised and tweaked it by adding a bit of base gravy, more water or stock, or extra tomato puree, or even veggies like potatos, chickpeas, cauliflower. No matter how you bend it, this recipe always come out super tasty!
Love the way you presented the video. Being a chef of 25 years does help to get the best out of your cooking. So for anyone who tries this recipe, prep time is essential, make sure you have everything to hand and don't get too despondent if it doesn't look exactly the same. Kashmiri chillies are there for the rich colour they give to the curry more than the heat they provide, as they are very mild. The chilli powder, sugar and vinegar are probably the 3 key ingredients to not overuse. Remember, you can always add but never take away. I prefer to use dried methi, crumbled in my vindaloo's, as it brings out more flavour. Sourcing quality ingredients is a must, don't be tempted to buy "off the shelf supermarket brand" spices as you will not get that authentic aromatic gravy. Great upload and keep up the good work.

Another hit! The restaurants in my area often add potatoes in the gravy, so I did as well. I parboiled them as I find potatoes don't cook well in tomato/acidic sauces. Flavour was same as what I've had at restaurants. Better than some, even. Thank you!

Just made this and it is delicious. One of the most balanced Vindaloo recipes I’ve tried. I did kick up the vinegar a bit because I like a little pungency to the flavor of a vindaloo, but I added some sugar so it wasn’t too sour. It turned out perfect, and I will definitely be making it again.

I have this marinating now. I used 2 1/2 teaspoons of dried Kashmiri chilli powder, will that be about the same as 4 dried chillies? Also will the byadgi chilli be a good substitute to the dried Kashmiri as I could not find them today? Looking forward to making up tomorrow. Thank you.

Ive never made Indian food but thankfully someone in a card shop someone (in Nebraska) was eating indian food and it inspired me to try it. Now my old boss from a pizza shop started an Indian restaraunt in my hometown far from nebraksa and eating the vinadaloo tonight made me search for your wonderful video. I made the vindaloo today after scoping this recipe out the past two days and shopping at the nearby Indian grocery store. Oh my this turned out well. Was apprehensive at first because I taste tested the raw masala and it didn’t taste like what I expected. By time it simmered and all the ingredients thoroughly cooked, it was absolutely amazing and worth it. I have only one complaint. I wish I had more gravy!!!! 😢 Thank you so much and I’ll be trying out your other recipes!!! Lastly, how can we make more gravy without adding too much water? I certainly dont want to make it watery or too thin. I like a thicker gravy.
You need to add water if you would like more gravy. Just give a taste test at the end and adjust the seasonings. I am glad you tried this recipe. Thank you
Good morning Bumbi. I will definitely give this a go this week. With reference to my post on your vindaloo masala paste. I see the in Goa there is Palm Toddy vinegar. Could there be a massive difference between Apple Cider and Palm Toddy. This is relation to that missing envelope of taste. I am on the hunt for other spices including Marrathi moggu Rotanjot and others to complete my pantry. Not much is available where I am. Thank you very much again, stay well. 👍

Made this yesterday. I think I need my local Indian restaurant's vindaloo next to it to compare. It was missing a little something (more salt and could also be cinnamon because I found the stick still intact at the end of cooking, it never got ground up by the blender) or maybe something else. That said, it was still super tasty and I'm proud to discover my favorite Indian dish isn't all that hard to make. Thanks for sharing. I tried chana masala for the first time when I last ordered Indian because of the reviews the item was getting... sooo good. Will have to learn how to make that too. Glad I found your channel.

That looks a simple but fantastic vindaloo recipe... i like the idea of forming thr spice from seeds .. seems more fresh... if I wanted it more spicy what spice would you recommend... cayenne pepper maybe? I like Kashmir for its rounded spicy flavour but it doesn't give as much heat.

Ive never made Indian food but thankfully someone in a card shop someone (in Nebraska) was eating indian food and it inspired me to try it. Now my old boss from a pizza shop started an Indian restaraunt in my hometown far from nebraksa and eating the vinadaloo tonight made me search for your wonderful video. I love Mexican food and even follow recipes from chefs like Rick Bayless, Pati Jinich. I find a lot of similarities between Indian and Mexican cuisine with the inclusion of chillies and cumin powder. I made the vindaloo today after scoping this recipe out the past two days and shopping at the nearby Indian grocery store. Oh my this turned out well. Was apprehensive at first because I taste tested the raw masala and it didn’t taste like what I expected. By time it simmered and all the ingredients thoroughly cooked, it was absolutely amazing and worth it. I have only one complaint. I wish I had more gravy!!!! 😢

Lastly, how can we make more gravy without adding too much water? I certainly dont want to make it watery or too thin. I like a thicker gravy.
You need to add water if you would like more gravy. Just give a taste test at the end and adjust the seasonings. I am glad you tried this recipe. Thank you

Could there be a massive difference between Apple Cider and Palm Toddy. This is relation to that missing envelope of taste.

This is my favorite recipe of yours. I like a lot of tanginess so I add, equal parts apple cider vinegar & sherry vinegar. Since I'm trained as an American/French chef, I substitute white pepper for the black pepper. Thank you so much! 🙏🙌😎

Made this yesterday. I think I need my local Indian restaurant's vindaloo next to it to compare. It was missing a little something (more salt and could also be cinnamon because I found the stick still intact at the end of cooking, it never got ground up by the blender) or maybe something else. That said, it was still super tasty and I'm proud to discover my favorite Indian dish isn't all that hard to make. Thanks for sharing. I tried chana masala for the first time when I last ordered Indian because of the reviews the item was getting... sooo good. Will have to learn how to make that too. Glad I found your channel.

That looks a simple but fantastic vindaloo recipe... i like the idea of forming thr spice from seeds .. seems more fresh... if I wanted it more spicy what spice would you recommend... cayenne pepper maybe? I like Kashmir for its rounded spicy flavour but it doesn't give as much heat.
Sure cayenne pepper will work or any regular chilli powder in combination with Kashmiri chillies.
