Would love to see a video of your team in the kitchen or how the kitchen operates when the two head chefs aren’t monitoring the kitchen. Like are there multiple sous chefs. Just something that’s always fascinated me.
I think the people that come there to cook for service are professionals with many years of experience and know the routines of a kitchen / service. Everyone works very clean and knows their stations. I guess there's always a sous or two working in this restaurant.
The two lead chefs/owners' senses of time and temperature are insanely accurate. I know there's timers everywhere but to have a running, splitting timer in your head for these dishes is astounding. A seamless transition and minimal downtime from when food is finished cooking to plated and served. Was also just expecting him cooking it on a slower/less staffed kitchen, but here we are in full lunch service and the man is making POV video on cooking new samples of fish. Love this content!
The cool thing about this vid is the chef being able to just walk into the pass and instantly take over and know whats going on. Thats how a kitchen should be run, everyone on the same page.
There is something relaxing about watching a busy kitchen, a chef in their groove is zen for me. Then I remeber I used to work in one and how stressful it is lol good times. I miss it. Love the videos. Chef POV is my new itch.

I have no experience of working in a commercial kitchen, having only done the seemingly mandatory stint waiting tables. What strikes me about Fallow's videos is the level of mutual respect between everyone and the almost calmness in the kitchen which is in stark contrast to some of the ones you see on TV. Brilliant to see and watch

Love everything you do, but I find bringing up raw cod head walking past diners is a bit .. off. I know I'm probably in the minority, but seeing you walk past with that would really sicken me. Could you not find a way of 'elevatoring' it up?

What I noticed is that while he’s working on the new fish, he’s not above stopping to make some mussels then helping out at the pass.
