    Ingredients:1 cup sabudana (tapioca pearls)1 medium-sized diced potato,1/2 cup diced carrot , 1/2 cup diced capsicum, 1/2 cup diced onion, 1/4 cup chopped tomato, and diced 1/2 cup peanuts (roasted and coarsely ground)1-2 green chilies finely chopped, 1/2 inch grated ginger,1 tsp cumin seeds, 7 to 8 curry leaves, ,1-2 tsp lemon juice, Salt to taste 1/2 tsp sugar (optional) ,1/2 tsp chilli powder, Fresh coriander leaves for garnish, 1 tsp ghee and 2 tbsp oil
    Instructions: Soak the Sabudana.Rinse sabudana 2-3 times under water until water runs clear. Soak in water just enough to cover them for about 2- 3 hours After soaking, the sabudana should be soft but not mushy. Drain excess water.
    Prepare Peanuts: Dry roast peanuts and coarsely crush them. You can remove the skin before crushing if desired.
    Add the coarsely crushed peanuts, salt, and sugar (optional) in sabudana. Mix everything gently.
    Cooking :Heat ghee and oil in a pan.Add cumin seeds and let them crackle.Add curry leaves .
    Add the diced potatoes and carrot to the pan. Sauté for 2-3 minutes until they get slightly golden, then add onion and capsicum and cook properly. After that add green chilies, ginger and tometo saute for a few seconds.Add the soaked sabudana to the pan. Stir gently to mix everything evenly.Cook for 5-7 minutes on medium heat, stirring occasionally, until the sabudana turns translucent and soft. Be careful not to overcook, or they will become sticky.Turn off the heat and add lemon juice and fresh coriander leaves. Mix well.
