just a tip to anyone trying this. when you add the vinegar (for the second time) you could use milder tasting vinegar instead. Something like white wine vinegar or rice vinegar.
I saw someone in the comments suggesting using Sir Vorty Wiggleton Mix-A-Lot to mix the sauces, and now i want to see the entire video of E&K simply cooking regular foods but using crazy resin gadgets (new of course)
If you want to make it easier. Prepare your peppers by removing the stems only (it does not matter if they are dry or fresh in this method). Once you have them ready, dump them into a Vitamix with any other base ingredients, then fill it up the rest of the way with your vinegar. Set the Vitamix on High, and let if mix. On the High setting, it will break up all the peppers and anything else you added. When you start to see steam coming from the Vitamix, it is now cooking everything at a very high temperature; you will probably need to mask up as you leave it to run about 5 more minutes (the pepper smell will open you up). Once you stop it; please do not restart it on high immediately (the heat will cause the lid to blow off like a large size fire cracker exploding under dirt and making it rain dirt). If you must restart it, put o Variable and slowly crank the speed, up to high speed; otherwise you will make a mess. I have made several jars of hot sauce using this method. It works well!!! I also heat up the clean jars and lids, so when I pour into the jars the very hot mix, then close the jars, everything seals properly. The last bath I made forced me to replace the original canning lids; it ate holes into the lids. I may have made it a bit too hot!!!

Hope you tummies weren't too bad after this and excited for this year's Halloween abomination, along with nightmare before Christmas its become a seasonal tradition for me.
I have like 3 yr old pickles in the fridge. Carving some mini pumpkins and pickling them in vinegar, would look like floating heads in a jar. And they might last years
If you like the smoky flavour, you should use fresh chilli peppers and char them in the oven/airfryer first, and then do the rest of the steps! Adding a pinch of smoked paprika is great, and if you don't want it too spicy add a whole red bell pepper :) It enhances the flavour and stretches the sauce! I will paste my personal recipe below
Red Chilli Sauce: - My go-to for chicken wings! Ingredients 1 ½ cups red chillis (de-seeded for less heat) 1 whole garlic, peeled and crushed 1 red bell pepper 1 - 2 large tomatoes 1 white onion, roughly chopped 1 ½ cups white vinegar 2 tsp lemon pepper 1 tsp salt ⅓ tsp black pepper 1 tbsp honey 1 pinch smoked paprika Method 1. Cut the bell pepper and tomatoes in half and broil them alongside the red chillis in the oven until lightly charred. Once cooled, peel and roughly chop the bell pepper and tomatoes. 2. In a medium-sized pot on medium heat, cook all the ingredients together with the spices in olive oil until onion is fully cooked (10min). 3. Add the vinegar and cover with a lid and let simmer for about 15-20 minutes. 4. Add to a blender and blend until smooth and creamy.
Habanero Sauce: My go-to for burgers! Ingredients ½ cup de-seeded habanero peppers 1 whole large carrot, peeled and roughly chopped 1 yellow bell pepper, halved and de-seeded (if a less spicy sauce is desired) 6 garlic cloves, peeled and crushed ½ red onion, roughly chopped 1 ½ cup white vinegar ⅓ tsp smoked paprika ½ tsp oregano ⅓ tsp black pepper ½ tsp salt Honey (to taste) Method: 1. Broil the habaneros, bell peppers, garlic, and onion in the oven until somewhat charred. Once cooled, peel and roughly chop the bell pepper and habaneros. 2. Side note: Peeling the tomatoes and bell peppers will ensure the sauce is a better consistency. If you don't want a smoky element to the sauce, you may also just skip the charring step and leave out the smoked paprika. In this case, I would suggest letting the ingredients simmer on the stove top for about 45minutes. You will need about double the amount of vinegar, as it will evaporate quickly. It doesn't matter what vinegar you use, I prefer white vinegar or red wine vinegar.

I make my own hot sauce out of fresh peppers which I first ferment with garlic for about 2 weeks and then blend together via blender to make hot sauce. I cheat though and add a bit of my favorite hot sauce into the mix ;)
Would a better way to cut down on some of the vinegar punch be to use some distilled water in place of a portion of vinegar. making sure the PH is still low enough, which I think is around 4.5 and lower, that it's still safe for consumption
For anybody wanting to make their own spicy sauces, please make sure to read up on proper PPE! Spicy stuff getting into your eyes is just as bad as it sounds.
I call shenanigans on it being hotter. There is no more capsaicin being added. There is not concentrating of it as it is sealed off. There is no chemical reaction making more capsaicin. It might feel hotter but 2 years time is really hard to remember properly. I think remaking the same sauces with the same recipes and comparing would help far more in making a comparison. But X to doubt right now.
Wellll, I could imagine a number of possible explanations - maybe the capsaicin diffuses slowly out of the peppers, maybe there are other chemicals that inhibit the capsaicin but break down over time, maybe there are related chemicals that have a similar effect that are byproducts of other breakdowns? (The last one is a stretch, but there ARE a number of other chemicals with spicy and spicy-like effects, like piperine or whatever is in szechuan peppers. There COULD be others, and MAYBE some of them are byproducts of pepper breakdown...though probably not.) Or, yes, it could be imaginary.
