I understand that Evan has an obsession with that lazer thermometer, but when it comes to cooking, you really should use a traditional thermometer to get the internal temperature. The outside cooks faster than the inside.

also, the top surface of something heated from the bottom is always going to be the coolest, so not quite accurate.

as the daughter of a cheesemaker, I squealed many times.
by the way, diluting the citric acid is very normal! in the cheese classes i help out with, we usually dilute the citric acid just to get more control
and it is pronounced reh-net (just like it is spelt)
and tempering the curd (pouring hot water on it) is the best way to get a good outcome
Then i have a questionnn xD. I am Italian. So Mozzarella is our national Cheese somehow xD shouldnt the curd be pulled a lot of times IN the hot water? XDD thats how i heard it (never made it myself or anything like that) its a String cheese so it should have many "String layers" right?

You can feed the cheese water (whey) to pigs and make them extra delicious, they'll drink the whole pot voraciously
You can also make ricotta by (in simple but not accurate terms) adding more milk to the whey and cooking it. Every time you don't make ricotta with the whey is a lost opportunity to have real ricotta that your local supermarket will never sell.

Cheese tip that you don’t have to take just want to be kind: let it sit in the hot water to relax a bit then keep folding and kneading the balls onto themselves to stretch the fibers in the cheese. It has that ripped grainy texture cause the grains are short and arent stretched. Once the whole thing can have that awesome stretch, then you’re good to go

As someone who lives in Wisconsin, on a dairy farm, and has made cheese curds many times. Ima give y’all a B+, but for your guy’s first time y’all did great! 😊👍
P.S. I use the water method and it turns out great every time. Just a tip tho, leave the cheese in the water for like 5 to 7 minutes then separate it into another bowl. After that you can start making ur curds.

13:41 I learned how to do this in my culinary chemistry class. The way I was taught was to fold the curds with your hand or a rubber spatula until it starts to cool off, then throw it back into the microwave for 15ish more seconds and repeat the process until it doesn’t crumble and it has a slight bounce to it.
If anyone wants to learn from this. I’d say fold more in between microwaving.

Thank you for the metric conversion it makes it easier to follow along in the video.
Also, side note here when you added the citric acid to the milk you actually separated the whey and the curd (as milk is an emulsion and sour stuff breaks it) of the milk and if you would have stopped at that part and strained the whey out you would have gotten paneer which is an Indian fresh cheese (very tasty when cooked with spinach puree called palak paneer it is an Indian dish which I adore). So making cheese is easy if you are only looking to make paneer.
In any case, loved the video.

The difference between butter and cheese: butter is made with the cream of the raw milk that’s been set out for 24-48 hours at room temperature. Then it is churned until the fat separates from the buttermilk (which is why buttermilk is sour, it’s milk that’s been set out). The fat is then collected and washed. The more buttermilk that is rinsed off in cold water, the longer the butter will keep. Then it is patted with wooden paddles in to form. Cheese is cooked milk, usually with a bacteria culture and rennet (ren-net), that is traditionally from a calf’s stomach (stomach acid), but there’s vegetable rennet now. The calcium chloride is to help the protein chains. During cooking the protein separates and bonds together, leaving behind whey, which is a different protein but mostly water (whey protein, like in muscle builder supplements).
So the tldr,
Cheese is fats and proteins, chemically soured.
Butter is fats, naturally separated and soured. You can taste the sourness in unsalted butter that is used in baking. Irish butter, like kerrygold, actually let their milk sit out longer, getting a purer fat in the cream as it rises to the top and separates from the milk.
Maybe I need to learn how to make cheese out here in my forest so I wont have to rely as much on taking it from campers who bring it with them

I just recently found this channel and I already love their content, but I love them even more knowing that they watch Unus Annus! Momento mori.
Y’know, the point of the curds being out in hot water is for you to be able to stretch the curds, which is supposed to strengthen the curds so they can come together. I could not stop cringing the whole video, but I loved it! Hilarious fails that just brightened my day.

Theory: The reason the microwave cheese didn’t work is because you microwaved it for the time/heat level that was meant for the FULL cheese lot. You separated it into two. In my ThEoRy, you should have halved the microwave time since you were only doing half of the cheese. (Idk if that made sense and this isn’t me trying to be rude or anything, I love you guys!)
I'm also not sure if Katelyn was folding the cheese each time, hinse why the top got crusty.
I agree or even a Cheese cloth in my opinion...
From my experience with diy pralines (melting chocolate the right way is hard, keyword tempering): One of the problems is probably that they used a GLASS bowl. Glass itself gets hot in the microwave, heating the cheese-thingy very uneven. Using a plastic bowl solves this problem.
Both cheeses got to much heat, I think. Proteins are very sensitive to changes in ph and temperature.
As someone who makes mozerella with only the microwave method they needed to fold and work the cheese. I'm not sure why they thought they were told not to disturb the it.....

In Finland we do 'Home Cheese' that is somewhat similar to this but we let it purposely be grainy. I think the receipt is similar-ish, but you don't heat it again, you can add salt and herbs in the first step and then when it has heated to 41c you drain it and pres it slightly. Depending on the pressing amount it can get a little squeaky, but I personally love it. And if you put it to oven and bake it, its called 'bread cheese' or 'oven cheese' depending where you are from. But It's so good!

Certain sugar creations would be good to see like spun sugar or sugar glass because it can be somewhat challenging to get right and the sugar goes through different crystallisation stages based on temperature which yields different effects (such as hard crack or firm ball)
