I have used both a standard quick pickle with vinegar and with lime juice as you have done. They both have their uses, but are both different enough to say one is not better than the other. Though I do prefer something like red wine vinegar overnight in most cases.

Good video thanks I'm Mexican and the pickled red onion with habanero chile and lime and salt and watch out they are very 🥵 are used to accompany a dish from Yucatán called (Cochinita Pibil) which means buried and cooked underground it's adobo is made of paste called achiote it's already prepared with spices you simply blend the paste with a bitter orange juice add mixture to your pork meat cover with banana leaves and bake in oven for about an hour

Watching you make such delicious food with regular ingredients you can get at the grocery store and you use the normal tools most of us have like a blender. When I see your videos it inspires me to try making more food on my own.

Every street taqueria where I'm from in México will always have those onions on your salsa plate. It goes well especially with carne asada. Add a bit more chile I recommend and super thinly sliced garlic. Even better!
Love how they treat red onions like exotic fruits where It's the only ones we have here. Chinese white giant onions were only available when the price was high. It was one time i personally used white onions.
Mexican from the yucatan península here (the place where this pickled red onion is used pretty much everywhere)… I just need to point out that you should definitely skip the sugar. It is never used. Why would you? You can add a couple of peppercorns if marinating overnight tho.

From the video it looks like equal parts of salt and sugar, but hard tell. Personally, I would use less sugar, more of a small pinch, or none at all. In savory dishes, salt is the main ingredient and is a much smaller amount. Try the recipe and see which amount of sugar is to your liking.
No it isn't. It's a matter of preference. The only ingredient that's outright necessary for pickling is salt. You can adjust this recipe or any recipe to your liking. 🥰

In India we make this with white vinegar. It's pretty common in restaurants. They're called sirke wala peyaanz 🙂

About a week or two depending on the freshness of the onion
If you keep them in the fridge they can last about two weeks. The acidic lemon juice plus sugar and salt act as preservative so they won't spoil.
