- Hello again everybody! We are back with the Lone Star Grillz IVS Smoker and we have made the perfect match with the latest FireBoard 2 Drive with Driver Blower. I can't say enough about how impressed I am with the FireBoard 2 Drive with the fan. It's just insane how well it help the correct temp. We made up 4 racks of St Louis Style Ribs with some awesome Stubbs Rub.

I placed my order on my ivs in october. I ordered mine the same as yours but with all the additional racks plus the addapter for the fireboard 2 unit. Expecting it in the next few weeks. Can't wait.

RV leveling blocks would be perfect for leveling this. 👍
I always use KC Masterpiece sauce on ribs - just the best flavor profile to match with my dry rub.
Fireboard review coming? Interested in seeing how that fan works. You're the first one i have seen use on a lonestar offset
Great lookin ribs E. I'm no pro either I just love cookin outside and over real fire. I never pull the membrane off before the cook, I believe it holds the moisture in better and after the ribs are cooked the membrane comes off waaaay easier. People say "oh you don't get any seasoning if you leave it on" . There's nothing on that side to eat anyway. Great video brother keep up the great work.

Love the videos! I have the same IVS with the same fireboard 2. Getting ready to use it for the first time this weekend. I was wondering to i need to shut the ball valve down the same amount i would without the fireboard? My target temp is 225°. I have the adapter for the ball valve to fit the drive. Just wondering if i can leave valve wide open, close 50% or do i need to go down to about 1/8 open? Sorry one last question, how about the top damper? Should that be wide open?
Any tips would be appreciated 🤙🏽
FIREBOARD MAKES A ADAPTER FOR THE BALL VALVE SO YOU HAVE A PERFICT FIT AND I HAVE THE MAGNETIC HOLDER ALSO , BOTH WORK WELL. ALSO THE COMPITION PROBES ARE THINNER AND WORK WELL THEY OFFER SHORT PROBES ALSO ON THIN MEATS

Where did you get that ramp? I need one of those for the same reason.
I found if you cook the fat side towards the burner at 350 for the first 2hrs. Then cook the next 3 hrs at 300. Flip the ribs to skinny side towards the burner for 2 more hrs at 300. No wrap works best. I feel wrapping the spare ribs takes away the juice and tenderness.
Does it seem like, in general, food cooks fast on your IVS?
Also, is this the mini?

I appreciate all your videos. Love your transparency and sharing of knowledge. I am waiting on my 28 x 48 with vertical from Lonestar right now. If you were to get one, IVS or your stick burner, which would you get if only one?
Your killing me mike lol... I’d go with my stick burner because it’s so versatile. I can do multiple types of cooks not just smoke. So I can grill, smoke, flame kiss, skillet and more. And on top of that it holds so much food space. But Knowing what I know now, I’d definitely still try to get me the IVS second. It’s a ridiculously epic smoker.

a butter knife works great to remove the silver skin. flat and dull so it's easy to get it under the skin and it won't pierce as you push it further in.

How do you think the ivs compares to your offset? I have the mini and love it but have never cooked on a offset I always say someday I want a offset but don't know if is worth the extra effort
My IVS cooks super steady and is a set it and forget it. I get good smoke from it. I don’t however get a big smoke ring. I am still trying to define and perfect that part. Now my offset.... it’s super durable and versatile. So it can grill, it can skillet, it can bbq, it can smoke... it can sloooow cook. Now the smoke on this one is a lot more than the IVS. I definitely get a big smoke ring. But it’s not a set it and forget it. Though it holds temp well, you still need to monitor it every hour or so. Overall I LOVE both of my pits! They both have their pluses and minuses but they are both great!

I miss seeing your videos. This was a nice cook. Thanks for the push...I’m due to make some ribs. Looks like St. Louis ribs are on the menu for the upcoming weekend. I’ve been doing quite a bit a research on insulated cabinets & I’m about 85% certain the large Lone Star IVC smoker is getting the nod. Are your temps consistent throughout the entire camber (i.e. each rack top, middle & bottom from front to back)? Thanks for sharing 👍🏾.

It would be nice if they made the fire board with the wires coming out the top, so they don’t loop in front of your screen, and you could set it flush on top of a counter
You can flip the FireBoard 2 around and the screen rotates so you'll end up with your probe ports at the top. EDIT: see this review with pictures of the device rotated. smokingmeatgeeks.com/fireboard-2/

I won’t lie. I do still get a very good smoke flavor from the IVS now even more when I cut the wood like I did in this video.i did another cook after this with lump mesquite, and hickory wood. I got more smoke. So I’m still experimenting but getting more and more heavy smoke each time. The offset stick burner still holds the record though lol. My clients have told me they get a nice heavy smoke flavor, but I guess it’s just the BBQ snob in me that wants more lol..

Pick up a fish skinner , they work great on the membranes .
Use a butter knife to take the membrane off it's alot easier IMO
I will next time for sure. Just a habit for me to grab the knife.
Use a spoon or fork the round part between the bones and membrane not a knife u just cutting and making it harder.
I’ll try that next time for sure. I usually use my dull knives. So this one was too sharp lol. But a spoon sounds legit.
Butter knives work great.
